Laura Theodore's "Vegan-Ease" cookbook couldn't have been released at a better time than now! Last week I finally kicked my behind in gear and started eating healthier foods. I no longer eat frozen meals and I have not visited a fast food restaurant in over a week. I have started eating fruits, vegetables, beans, grains and nuts/seeds. By doing so I have already lost 7 pounds within one week.

Vegan-Ease is full of quick, yet tasty recipes that are bursting with flavor. This morning for breakfast I made the "Banana-Date Breakfast Cupcakes" and they were wonderful! The ease factor of the recipe is at a score of 1 and only requires 6 ingredients. For lunch I made the "White Bean and Kale soup" smooth and velvety and oh so good!. The ease factor of this recipe is at a score of 1 and only requires 6 ingredients as well. For dinner I made the Oven "Fried Rice" Casserole and was blown away by the yum factor! Now that I have this recipe, I no longer need to buy greasy unhealthy takeout fried rice. The ease factor of this recipe is at a score of 2 and only requires 9 ingredients.

Each recipe in this cookbook comes with a ease factor score ranging from 1 to 3. There are no long list of ingredients to purchase and most of the foods one will need is most likely in your pantry. There is a handy vegan-ease shopping list included inside this cookbook along with 12 full laid out menu guides. Each recipe in this cookbook has nutritional information and serving size listed at the bottom of it's page. There are beautiful images of a lot of the recipes within. There is so much helpful and useful information in this cookbook. I am beyond thrilled that I decided to make this purchase for it is worth every penny!

I've been vegan for many years, and I love that Laura Theodore's Vegan-Ease speaks to newbies, novice cooks, and long-time vegans alike.

This book proves that anyone anywhere can easily cook up vegan meals that will be loved by everyone, no matter what their dietary preference. It also dispels the myths that that vegan recipes take too much time to prepare, are too expensive, and require weird ingredients. All of these recipes come together quickly, use easy-to-find inexpensive ingredients, and everything I've made so far has been super delicious!

Even though I’m a pro in the kitchen, there are many times when I just want a quick dinner – or I might have evening plans that don’t allow me to spend a lot of time cooking. Laura Theodore’s Vegan-Ease is perfect for such occasions. Each recipe has an "Ease-Factor" rating, so you'll know easy it is to prepare and how much time is needed to cook it, making it super easy to fit meal planning into your schedule. Most of the recipes come together quicker than a pizza delivery – and they’re more economical too!

Been vegan for 30 years. Always looking for new recipes. This has been great so far. My meat and potatoes husband has even given some recipes a thumbs up! Just made the Sassy Split Pea Soup. WONDERFUL! Next up??? Strawberry Mountain Pie yum!!! This book is FULL of Flavor!!!! By it and give it a try at least one day a week. Go Meatless!!! You digestive system will thank you.
