Glad to finally see a book from this true Master Chef. Very useful information for the field and the kitchen. I have tried several of the recipes and my guests and I were thrilled with the results. My favorite parts of the book are his personal stories! I would love to read his autobiography.

This book is just what I needed. There is more useful information about wild game and butchering than a culinary school text book. Knowing that Chef Milos was the first Certified Master Chef in the United States and he was the Chef partner at the famous Golden Mushroom restaurant, I am looking forward to cook with the classically good recipes.

Cooking wild game is not an easy task due to its lean nature. The wisdom, skill and true talent chef milos shares with his readers demystifies and explains in great detail how to butcher furred and feathered game, filet and portion fish, properly handled and care for the harvest before cooking. He also answers the question most hunters and anglers ask "what do I do with my harvest?" with a slew of well written and easy to follow recipes that work, I know because I've been using his recipes for nearly 30 years!!! If you enjoy the outdoors and thrill of the hunt this book is a must. If you've never cooked game before read this text "twice" before attempting anything. everyone else should buy this book just for the stories alone!!!

Fantastic book by a REAL ICON "in the field", if you will pardon the expression. Not only educational, but this book has led to many a memorable dinner at home, and the chance for many more unexplored culinary opportunities. Hail to the first CERTIFIED MASTER CHEF in the United States!
