The shorter blade on this chef's knife is useful for smaller chopping, mincing, and slicing tasks. Cooks with smaller hands may prefer a 6-inch blade as the shorter length offers better control while cutting. In addition, the blade's greater width generates a better rocking motion for chopping and makes it easier to cut through thicker-skinned fruits and vegetables, such as melon or winter squash. The width also provides a great platform for transporting chopped onions or garlic from cutting board to sauté pan.
Part of the Four Star series of cutlery, this chef's knife has a fully forged, high-carbon stainless-steel blade. The blade, bolster, and tang are welded of one piece of metal using Henckels' Sinter Metal Component Technology, which distributes the right quantities of metal to each part of the knife. The result is a longer-lasting edge and a more consistent angle on the blade. The blade has also undergone Henckels' Friodur ice-hardening process, which further strengthens it and protects it from discoloration. The professional choice for chopping, dicing, bias-cutting, and slicing. Knife handle is rocked up and down with one hand while the fingers of the other rest lightly on the back of the blade towards the tip.
I have a drawer full of Henckels Four Star knives (in a block, of course). This is hands-down my favorite. It is just the right size for 80% or 90% of my cutting tasks. It is not too big, not too small. Make sure you get the 6-inch "Wide" Chef's Knife, not the other one.
