Gluten-Free Flour Tortillas
MAKES 6-8 TORTILLAS

1 cup white rice flour
1/3 cup potato starch
1/3 cup tapioca flour
1/3 cup fava bean flour
2 tsps xanthan gum
1 tsp baking powder
1/2 tsp sugar
1 1/4 tsp salt
2 TBs vegetable or other shortening
3/4 to 1 cup warm water

Combine all of the dry ingredients, then cut in or work in the shortening using a pastry blender or two knives or your hand.
Add the warm water, starting with 3/4 cup and mix well.
Continue to add water until a soft, cohesive dough is formed.
Heat a comal, tapa or griddle to medium heat. Then, form a ball of dough into a flattened disk, cupping the outside edges a bit to form a round.
Using a bollilo or rolling pin, roll into a round disk about 1/8 inch thick and about 8 inches in diameter or to your preference.
Bake one at a time on a hot griddle until the surface bubbles. Turn only once, the first side should have brown flecks.
Bake until the second side has slightly browned - should brown in a very short time.
Keep warm in a tortilla keeper or wrapped in a cloth until served.
Note: Will freeze in a sealed plastic bag for up to three months.

I love this stuff!!! It makes everything so yummy. You can use 2 cups of this, 2 large eggs, 2 tbsp oil (i used extra virgin coconut oil), 1 cup of cheese (optional - sharp cheese works the best), a little italian seasonings, mixed in a bowl, slowly add 1/4 cup water or milk/milk substitute to make pizza dough. Need dough thin - makes 14" round pizza crust. That's basically the recipe for Chebe pizza crust (I realized when I opened that product and measured the flour inside and studied the ingredients listed on the box) - which is highly rated here on Amazon. Don't go crazy with sauce because it won't get really crispy. Bake 15-18 minutes. It's the best pizza dough you'll ever have, even if you don't have special diet needs. My kids love this stuff, even my 2 year old - the pickiest eater!!!!
I also use this as a thickener in recipes.
You can also use this with arrowroot flour to make a pizza crust that's crispy on the outside and chewy in the middle - totally yummy - recipe at predominately paleo . com. She also has a lot of other recipes that use Yucca/Cassava which is where this comes from. I'm leery of cooking from scratch though as it's poisonous and you have to cook it properly to avoid poisoning yourself, which is why I like to use this already processed flour, so I don't have to worry about that. Whatever she has in her recipes, if it says 2 cups of cooked mashed Yucca, you substitute the exact same amount of flour.

I also used this to make the chicken nuggets from the cookbook Nom Nom Paleo: Food for Humans - the best chicken nuggets ever, extremely simple. My kids said they were on par with McDonalds!!! I of course thought they were better since this version is 1000 times healthier.

I have a problem with this newly packaged tapioca starch. Somehow this product has unlisted allergens it did not used to have before. I am allergic to beans and corn and their derivatives. I used to be able to eat this very tapioca starch in the old, golden color package with no problem. When i ran out of it, i re-ordered and received a product in new packaging. I assumed the quality of the starch itself was the same, very unfortunately for me. I had a very bad allergic reaction from this newly packaged starch. I am anaphylactic, if that tells you anything. I am extremely upset with the company not issuing a warning that the product has changed. This is unacceptable and life threatening to people with allergies, like myself. I give it 3 stars, considering that people with no allergies might still find this new version of the product to be okay. AND because amazon customer service did it's best to address my problem with not receiving the expected old version of the product that was safe for my health....

This flour is a great substitute for wheat in bread recipes. I uses it to make Brazilian bread. The recipe only calls for an egg, cup and a half tapioca flour, 1/2 of milk, garlic and onion powder and 1/2 cup of olive oil. It also tastes great as a pizza crust. This is a great brand for celiacs to use.

My only previous experience is with Bob's Red Mill and since I really only use this in combination with other flours and starches, I can't really say that I notice any difference in taste, texture, etc, but the price per ounce was quite a bit less.
