I wanted quality sorghum flour that wasn't Bobs Red Mill (my son is corn allergic/reacts to Bobs Red Mill) and despite the hefty shipping price, decided to give this a try. I made brownies, pancakes, muffins...anything you'd normally use wheat flour for and mixed with tapioca starch/potato starch. Excellent taste and my son didn't have a reaction! Certainly worth the expense.

I think Sorghum flour is one of my favorite gluten free flours. Authentic foods have ground these flours very fine and they really make wonderful bread. The taste and texture are just right. Another keeper indeed.

Made egg pasta with this instead of all purpose wheat - excellent texture and taste! Rolled it thin and made ravioli. I haven't used it for anything else, but frankly I'll keep buying it as pasta flour and if I can use it for other things, too, all the better.

As self-taught GF bakers, we have recently begun to amp up our recipes. We use a lot of sorghum flour because we like it and our baked goods turn out incredibly nice with it.

These superfine flours from Authentic Foods make everything even better - wonderful crumb, light and moist cakes and muffins, and crusty crusts when needed for breads. Admittedly, we were dubious until we made our first test batches and side by side comparisons. Wow and worth every penny. Totally excellent products. Thank you, Authentic Foods!

I use this in my "go to" gluten free blend. It is heavy and sweet if used alone. When combined with Garfava Flour, the yeast bread has a very good texture. I don't like the bean flavor and sorghum reduces the beaniness.

Authentic Foods is definitely the best of all the gluten free flours I have tried. They are very finely ground which is important (especially for rice flours) to use in baking. There is none of the grittiness associated with many gluten free flours. The sorghum has a nice flavor and is most like a wheat flour.
