The shape of this pasta is perfect for any dish that is centered on spinach (Florentine style) or any other leafy vegetable like arugula - or a combination. It is also perfect for rapini con aglio (rabe broccoli with garlic).

Up front - I am very loyal to Barilla brand because it is consistent. What I mean is I can obtain the same al dente firmness by cooking a package of this pasta using the same temperature and time that I used twenty years ago on a package. That consistency is why I use Barilla (with a few exceptions) for all of my pasta.

I mentioned that this is perfect for Florentine and similar dishes. This is because as the leaves wilt they wrap around the shapes, catching in the twists and making a perfect morsel that is hard to obtain from other pasta shapes. These shapes are also excellent for heavier ingredients found in rustica-style dishes.

Here is how I prepare rapini con aglio and serve it with this pasta. First I steam the rapini until it's cooked, but still firm. I then brown whole garlic cloves in olive oil, and after they have turned a golden brown I add in the rapina and continue on medium low heat until it's well cooked. I toss this into cooked and drained pasta, toss with sea salt and black pepper and serve. I often will squeeze a lemon wedge over the dish before serving.

If you are making Florentine style dishes, instead of cooking the spinach (or other leafy vegetable) in the sauce, toss it raw into the cooked and drained pasta, then add the sauce. The heat from the pasta plus the sauce will cook down the leaves, but their flavor will be more prominent in the dish.

Regardless of how you use this shape, it's interesting and - as I have hopefully shown - perfect for certain types of dishes.

This pasta stays al dente much more than other brands I have tried. I am so impressed that I am going to make a point of looking for this particular brand from now on. Bulk shopping clubs sell this for $7 per 9 boxes.

ETA: I always pick up boxes of Barilla pasta whenever it goes on sale. It is still my first choice for pasta in 2013.

There is no where in Jacksonville, Florida to get this product. It is the perfect fit for Shrimp Marsalla! My family requests that I make this all the time with Mayport Shrimp - the best shrimp in the world!
