I recently made several multi-curved wooden parts using a glue lamination process. I glued several 4 foot long thin slats together, then placed the assembly onto a curved fixture. Then I applied about 20 clamps to make the wood conform to the fixture. From when I started gluing until when the last clamp was in place took about 20 to 25 minutes. The Titebond Extend performed perfectly. I had plenty of open time and the finished parts were strongly and uniformly glued. I use Titebond 3 for all of my regular gluing.

I'm using this to assemble largish drawers with 1/2 inch finger joints.

By the time I get to the third and fourth side, the glue on the first side is setting. Can I get away with it? Yes, certainly. Would I like a little longer to adjust the fit? Most definitely.

I also find glueing finger joints to be messy. There's so many surfaces to coat, at several angles, and if you use more than a smidgen of this glue, it runs before you can make the joint.

So, a slightly less runny glue that took slightly longer to start grabbing would be better.

In fairness, I am not an advanced woodworker so maybe I'm a little slower setting it all up.

I found this glue to work as writen up by the manufacturer. It allowed me to glue a number of surfaces before assembling them without drying out on me. The glue was easy to clean up with water.
