I have this mini cheesecake pan, the heart shaped mini cheesecake pan, and the Norpro mini cheesecake pan. I much prefer my Chicago Metallic pans as they bake the cheesecakes more gently and evenly than the dark nonstick finish on the Norpro pan. Just be warned they are really tiny, each mini cheesecake is 1.75" across (which sounds bigger than it is). It is very easy to make an elegant display with different toppings, jams, fruit, drizzled chocolate, melted butterscotch, toffee bits, ice cream toppings, etc. on an assortment of mini cheesecakes. If you want an individual serving size cheesecake pan, try the Molten 'n More pan; unfortunately it has a dark nonstick finish, but I've managed to bake good cheesecakes in it by reducing the baking temperature.

I bake professionally and use these in my bakery for mini cheesecakes. I have many of them and have been using them for over a year. They bake very evenly and the size is great. The little discs that go at the bottom fit snuggly and I have never had a problem with batter leaking. I will note that they are an extreme pain to wash. My dishwasher can't get at all of the angles of the pan, therefore they need to be washed by hand, which is extremely tedious. However, I can not fault the product for this, so I'm not basing my review on it. Overall, I have been very pleased with them, except for one thing: they rust EXTREMELY easily. When washing by hand, I can't let them air dry because even leaving them out long enough causes them to rust. Once they do rust, they are ruined. In short, they take a lot of attention otherwise you will end up replacing them frequently. I usually wash them by hand and then throw them in an oven to evaporate the water. Also, the little discs are very easy to lose, as they are quite small. This isn't necessarily a problem except that the company won't sell them separately (I called to ask), and the pans are quite expensive to have to buy a whole new one just to replace the discs. If it wasn't for the rusting, I would have given these 5 stars.

My dish for the holidays is always mini-cheesecakes. It was always frustrating to get them out of my mini-muffin pan. This pan has made it so easy! I no longer dread making this dessert. Just a note though... the cups on this pan are approx twice as big as a regular mini-muffin pan so adjust your recipe accordingly. I just double my recipe and get bigger mini-cheesecakes. I don't think anyone will mind.

The only reason I didn't give this 5 stars is because of the cup bottoms. They have to be washed by hand because they stick together if you try to wash them in the dishwasher. The pan can go in the dishwasher (but don't let it sit with water on it too long - it will start to rust). Otherwise, the pan works great, and makes presentation a snap. I've used it twice and already received many compliments, and one person asking what bakery I bought them at - because they were too perfect too be homemade!

i started using chicago metallic products years ago after reading good things about them from professional chefs and i have not been disappointed yet. i recently made over 200 mini cheesecakes using two of these pans for a family member's wedding (over the course of a month or so!) and the pans baked each of the cakes evenly, the results were consistent, and the cheesecakes were a hit! the trickiest part is pulling the cheesecakes out of the pans without damaging the top or crust but with patience and practice (and it helps to run a knife around the edge of each of the cheesecakes right after you pull them out of the oven, just the way you would with a larger/solitary cheesecake) it's not a problem at all. i'm keeping both of the pans and will happily use them and recommend them to others for years to come!

OK, so when I got this Mini Cheesecake pan I was very excited and showed my neighbor and THEN we decided to have a cheesecake cookoff, and we both made fabulous cheesecakes but MINE were so impressive because of the size. You can't go wrong with a 3, 4 bite cheesecake unless of course you want more!! BUY THIS PAN, YOU WON'T BE DISAPPOINTED!

I now own 3 of these mini cheesecake pans and absolutely love them. The mini cheesecakes are truly the perfect sized dessert!
I was skeptical about how easy it would be to get the cakes out of the pans, but i've not had a single problem. To bake, I typically use a water bath, wrapping the pan in heavy foil and placing in a large roasting pan. To remove the cakes, just let the pan come to room temperature after being refrigerated, or warm slightly with a hairdryer :-) and push the bottom disk up..cakes slide right out! To maintain the integrity of the pan, I suggest never putting it in the dishwasher and avoid scratching the finish, as this will lead to rust.

Would have given 5 stars if I was writing it about the FIRST use, but a week (and one gentle hand wash) later, the cheesecakes came out with a metallic residue all around the sides. So disappointing as I was making them for a special Christmas event. f course I cannot serve them now. Will post photos of the tainted cheesecakes here after Christmas.

I hand washed it gently and also dried with a soft towel. There was no unnecessary wear and tear on my part. I will be sending this back. If anyone has recommendations on a similar item that does not leave residue, please leave a comment.
