This is really the next best thing to homemade pasta; especially Artichoke pasta which is very expensive to make. This is also a much healthier pasta than the average with 28g protein per half pound box. It's just amazing the flavor in this dish - when served simply with olive oil and garlic you can really get the flavor of an artichoke with the contrast of bitter taste and sweet aftertaste. Likewise it stands up to a full red or white sauce also.

1 disclaimer: by no fault of the pasta manufacturer Amazon once sent me a box of pasta that had passed it's expiration date so just make sure to check the lot date on the side of the box and the end of all the individual packets.

As I am trying to cut down on wheat products, I purchased this kind of pasta to diversify. It is made from artichoke flour and is much healthier than wheat flour. The taste is just the same to me. Sent half of the boxes to my son to try as I want him healthy also. This is my second purchase of these and I am happy and so will continue to use.

This is excellent pasta! We eat this at least once per week. It cooks perfectly every time, never becomes mushy even if you forget and cook it too long. The Angel Hair cooks fast! The taste is fresh and delicious even with just a bit of olive oil and salt. Our favorite is to toss it with alfredo sauce and top it with salmon. Also excellent with some sauteed vegies and melted cheese. Tastes just as good the next day reheated. We love this organic pasta, it is a pantry staple for our family!

The pasta is fine. It is the size of the box that I take issue with. The standard size is 12 or 14 oz. now. (It used to be 16.) So now that I am used to 12 oz., 8, or using 2 boxes to make 16, just won't do.

I mix half of this type of spaghetti and 1/2 of the EINKORN spaghetti from JOVIAL...
Makes for a really nice spaghetti mix.

Both types/brands cook up nice.
They are not mushy or tough.
I cook them Aldente...once water boils, I put the spaghetti in the water, Cover, turn off heat, and set timer
for 13-14 minutes! Drain immediately! Perfect every time!

These products are made with artichoke flour, which is a little better than the original, so he can have some of this occasionaly, and the taste is great, doesn't taste any different ffom the original pasta. Our family loves DeBoles products. I am grain and gluten intolerant, so for me, things like spaghetti or macaroni salad are a rare treat. However, when we use this brand made with Jerusalem Artichoke flour, I don't have nearly the stomach problems I would with traditional dried pasta noodles. My kids and other family members have no clue we use this brand when they visit as they taste just like regular dried pasta they buy in the store. Yes, it's more expensive, but when you have troubles with gluten intolerance, it's a wonderful treat to be able to have pasta again once in awhile!
