My local Asian market stopped selling these organic noodles for some reason and the other brands they sell are loaded with salt - between 450 and 750 mg per serving! These somen noodles (and the other types of Hakubaku organic noodles) have no salt added. To me this isn't just a health issue, but gives better taste.

In the regular supermarket these noodles sell for almost $5 per pack, so the price here of $24/eight packs is very good. I recommend all the Hakubaku noodles, as the taste and quality are much better than the other brands I have tried.

Somen is meant to eat cold. You use 1/2 cold water, 1/2 memmi sauce with wasabi, grated ginger and scallions, and you dip the somen in it. It's like cold soba noodles. This is the best type of somen you can purchase in bulk. You just boil water, put the somen in for about 3 to 4 mins and rinse with cold water, serve over ice. Don't get these if you don't know how to cook them or you may not like it. This isn't a replacement for angel hair pasta. Obviously you'll have to remove the paper ring around the noodles...that's just common sense and not worth a 4 star rating (from the other reviewer).

I am beginning to understand the Japanese obsession with noodles! These are delicious and easy to adopt! I followed the preparation instructions and got perfect results. The flavor of the plain noodle was good, substantive texture, and an extremely fine noodle . . . handle carefully. These mixed nicely with vegetables and tsuyu sauce, or a dash of soy sauce. I also got the soba noodles and am enjoying them as well. This brand of organic noodle is very good and a premium treat.

Very good noodles, and organic as well! Since leaving Japan, my wife and I eat these noodles all the time rather than buy noodles made in Japan, which are likely to have some Fukushima contamination. These noodles are made in Australia and are safer than foods being exported out of Japan.

This noodles don't cook well in microwave. You need a lot of hot water to prevent them from sticking together while cooking. Also, stir frequently.
It is VERY time sensitive. Remove from hot water immediately after cooking or it will turn too soft.

If you're someone who likes soft noodles with some bite, do not buy this.
