The cookies I bake on these pans come out looking beautiful and it would probably take a lot of extra minutes forgotten in the oven to burn a cookie on these "air" pans. My only dislike is that they stay quite hot for a long time, so putting the second and third batch straight away onto the pans can cause the cookies to spread a bit before they are supposed to. I would recommend having several extra of these pans so you can give them extra time to cool down between batches.

As I wrote in a previous request for an evaluation, the 12" x 14" airbake baking sheets are perfect for use in my countertop oven. I love them. This way. I can use the countertop oven for smaller portions without having to 'fire up' the main oven, although the sheets work well in the larger oven also.

I'll be a voice of dissent here and say this is the WORST cookie sheet, especially for something that's supposed to be a premium product.

This cookie sheet warped almost immediately and, though I have continued using it, the so-called nonstick surface is almost completely useless. Even with a nice, even coat of cooking spray, everything sticks to this thing. The only things that don't stick are breads with a layer of corn meal underneath. I generally use it with parchment paper, thus defeating the purpose of a nonstick pan. And it's irritating using parchment paper on a pan without edges, because products tend to slip off the sides.

(in fact, struggling to remove a biscotti loaf from this pan just now is what led me to write this review in frustration - and yes, I did spray well first)

I have only ever used this baking sheet as directed and find it irritating that the manufacturer strongly urges users not to submerge this pan when washing, because sometimes (due to all the sticking) it really needs a good soak. Nevertheless, we have been careful not to soak it, and get it clean (awkwardly) out of the sink instead.

This pan is difficult to use and difficult to maintain; the very worst of both worlds. I do enjoy having a pan without edges to use as a peel when sliding bread loaves onto a baking stone, but I could probably use any old board for that. As a baking pan, I'd go for an unfinished professional half-sheet pan over this gimmicky one any old day.
