Directions

Soak overnight in water. Rinse grains, place in pan and cover with water. Simmer 2-3 hours until corn bursts open. Add salt during the last 15 minutes of cooking time. One cup dry yields 2-3/4 cups cooked.

Delicious corn slaked and dried- ready to soak and cook. Do not use powdered lime, this step is already done. I had no trouble with soaking this corn overnight and then blooming it in broth. It took about an hour simmer.

I ended up throwing it all way -- all 25 lbs of my order after I used a few pounds of it to make my grandmother's recipe for posole. It just wasn't TRUE posole. Although it resembled the creamy white kernels in appearance (except the kernels were a bit rounded and too fat at the germ), the taste was completely wrong. It wasn't terrible, it just wasn't posole and I couldn't eat it. I believe this corn is used for Ecuadorean food -- definitely not Mexican -- and certainly not posole. What a disappointment that this company (who does have lovely offerings on their web site) is passing this product off, perhaps unintentionally, as something it certainly isn't. Yeah, I should have tried to return it, but I was so disgusted. It took me a while to get my perspective back -- I mean, it was only corn... I'm better now... :]

I'm used to buying hominy that needs to be soaked in lime and then rinsed. Also known as "slaked." I am aware that much hominy is sold that has already gone through this treatment and then dried. This is often referred to as "Prepared Pazole" or "slaked hominy," but it should be right on the label. I currently have two pounds soaking in a lime solution. I guess I'll find out tomorrow if I need to throw it out or if it is the raw untreated hominy that was meant to be soaked in a lime solution.

I wish I knew exactly what I had so that I could devise a strategy for cooking it.
