I purchased Monin's Violet syrup last winter, when I wanted to make classic cocktails and Creme de Violette liqueur was not yet widely available. It made a delicious, if slightly too-sweet Aviation cocktail. Now that Eric Seed (of Haus Alpenz) has gotten real classic liqueurs back into stores, I prefer the more authentic ingredients. That doesn't mean the Monin Violet has lost favor in my kitchen -- when I make a Violette fizz, I often substitute Monin for plain simple syrup for extra violet kick.

This syrup makes wonderful soda and lemonade. It really pleased my teetotaler guests.

If you're shopping for violet flavoring for baking, candy-making or flavoring ice cream, you should search for extract or concentrate. This product isn't designed for concentrated use. (If you DO get violet extract, you can make your own violet syrup. 1 part sugar, 1 part water. Heat over a low flame until the sugar is just dissolved, and you have simple syrup. Once the simple has cooled, you can add your favorite extract drop by drop until you're satisfied with the flavor.)

This delivers! I love it in my soy milk, sometimes with raspberry or peach accompanying it. Or making chocolate violet creams. Can't forget putting it in club soda or mineral water. Try making violet/peach or violet/raspberry yoghurt too...Lovely violet flavoring- so hard to find. Thank you Monin- I'm thrilled to find you!!!!

I had been looking for a good violet flavor for some time now. I have a violette liquor that I use from time to time to infuse the flavor, but there are many things I like to bake or make that do not benefit from the alcohol in that, so this was an obvious choice. It smells and tastes like highly saturated violet that I was after, however it is cloyingly sweet, so use carefully in recipies and cut down the other sugar ingredients. Shipping on this item is high, at least half the cost of the product. I tried it in homemade marshmallows (great) and to flavor buttercream frosting, cocktails and non-alcholic beverages and found it to be very tasty. I think its a good substitute when you cannot afford the REAL violet essence which comes from France and is around $40 for a tiny bottle. This stuff is very satisfying if you crave that unique violet flavor.

Since my precious syrups from Florian in Tourrettes sur Loup(south if France) were confiscated at the airport as i unwittingly had forgotten them in my carry on... to make a long story short--ordering them online from Florian proved to be way too expensive when shipping costs from France were added...so Monin's syrup comes in with shipping costs at around $20.00 a bottle---a relatively good deal. The syrup is great and lasts if you play around a little with soda waters and dilute it properly for use in baking, fruit salads, ice creams and other desserts.

I just got a bottle of this, hoping to use it in cocktails, sodas, etc. I haven't tried using it as a mixer yet, but I have been just adding it to seltzer water to make an Italian soda (I call it "fairy soda" for my young nieces). It is very sweet (which is why I'm deducting one star) and not sure how it would hold up against other flavors, but even simply as a flavor for soda water, it's very refreshing.
