I tried this powder as an alternative to driving two hours to the nearest Chinese store, bringing home several fresh galangal roots, cutting off the moldy pieces (it molds super quick), then chopping, grinding and gently oven drying it. Galangal is very tough stuff, with a similar texture to wood. I loved the fresh stuff but it was often getting away from me before I could process it, and more of it would mold than was worthwhile to have driven all that way for!

Full disclosure here, it doesn't mold THAT quickly but when I was too busy and couldn't get it it for two weeks, most of it would be a goner, I'm embarrassed to say!

So I started to look for alternatives and bought a small bag of this one, since it had good reviews. Thanks to the other reviewers who helped me make a great choice. This galangal powder is fresh, finely powdered, has a lovely flavor and seems to have all of the good qualities of the fresh!

I had some friends over for chai, and I put galangal in my chai every day. They asked what it was, and I offered the bag but warned them not to put their nose in, but just sniff...he put his nose in anyway and phew! It was like a nasal wasabi blast! We had a good laugh but the point is, the stuff is fresh!

Galangal cures stomach aches of all kinds, by the way. Cramps, indigestion, you name it. It's good food and good medicine, so check it out!

I love my Galangal powder from Whole Spice, use it in many recipes instead of black pepper since I cannot have black pepper. I like the economic bulk package from Whole Spice. I keep a glass jar of the powder handy for cooking and refill it from the bag, as needed. I do keep the open bag and the jar in the fridge but you may not have to do that.
