"Hey, hey, HEY, PEOPLE . . . Let's be careful out there." Yes, the tag line from an old favorite Hill Street Blues came to mind before I even opened the package. Heavy Duty means 4 pounds of cleaver. FOUR POUNDS! And it's SHARP. If you are chopping cow, horse, pig or any other large animal, this baby is for you. If you are chopping chickens, ducks or roosters, this may be ok, but is probably overkill (excuse the pun). If you are chopping fish, greens or vegetables, get another cleaver. In fact, you probably want a Chinese knife (looks like a cleaver but it's not). Cut the head off a duck, no problem. Gross anatomy cuts on a cow? One shot. Done. Flatten garlic, yep, but so will a real sharp brick.

Seriously, unless you feel comfortable wielding this thing, and I'm 6'3" 225 lbs. (ok, 230) you will cut yourself very, very badly. This is not for delicate work. It is good steel and holds an edge very well. It is comfortable in a large hand and is balanced well - BUT it is 4 POUNDS. Are we clear?

This is by far the most impressive cleaver in my kitchen! When I opened the box I had an instant grin from ear to ear. I told myself, "This is what I've been looking for!!". The cleaver showed up fairly sharp but not sharp enough to shave with...but darn close! I worked the edge with a diamond sharpener till I was happy with it and its now RAZOR sharp. If you can imagine a 4 pound razor-sharp kitchen knife on steroids, that's what I now have. Its an amazing tools for chopping & dicing veggies or cutting meats. U need to understand that the weight of the cleaver is your friend. If your dicing things on your cutting board by keeping the tip on the board and rocking it over whatever your cutting, it does an amazing job because of the shape of the blade and the weight of it. I also use it for cutting up racks of ribs freshly off the grill and it does what's expected of it with ease (not to mention how it makes me smile when dinner guests watch me using it with a slight look of fear in their eyes lol!). Its become my go-to kitchen knife. I have bigger hands and I've used a 6" cleaver for years that I have used for everything you can think of when it comes to cooking in the kitchen. This is just a larger and better quality version than what I've used over the years. My girlfriend helps me in the kitchen but she is hesitant to use this monster. With the size and weight of it, its understandable lol. I would rate it 10 stars if I could. Its that nice of a cleaver. And yes I will use it when processing my buffalo in the fall!

I would like to see Dexter-Russell offer a package type of deal that would consist of three or four different sizes of matching cleavers that come in small, medium, & large. Meaning a set of matching stainless steel cleavers. A 5 inch, 7 inch, and 9 inch set of cleavers in a hardwood block with rosewood handles would be nice and impressive on my counter top.

I'm looking forward to using this cleaver for years to come!

I’ve used a number of cleavers even in commercial settings and this is one of the best in my opinion but it’s not even close to four pounds; weighing in on a new digital scale ordered at the same time at just over 2.5 pounds. It’s big and sharp and will handle the toughest bone-splitting work, indeed.

Folks, this bad boy is what it says it is....heavy duty. Great craftmanship, sharp blade goes through chicken bones like they aren't even there. I have used it on chicken, beef, pork without a hitch as well as crushing stuff like pepper and garlic. Would recommend this for anyone who does a lot of butchering/cutting of large pieces of meat. Warning, this thing is heavy and sharp, if you have problems with moving heavier objects definitely not for you.

I process my own meats from critters I raise on my ranch. It became obvious a short time ago that I needed something to help...take things apart...quicker and cleaner. My familiarity with the antique trade introduced me to the beauty and functionality of older ways of doing things. A cleaver became the answer to the need. When shopping around on Amazon I was looking for a combination of size, weight, and quality. When my cleaver arrived I was NOT disappointed. It is huge, heavy and razor sharp! I'm now almost looking forward to the next processing project, just to use this.

Update: 5-8-2013. I have been using this cleaver pretty regularly to cut up everything from turkeys to goats to occasional larger critters. If I had a complaint, and it's a small one, it would be that I don't have the wrist strength I would like to. This is a heavy chopper and takes a bit of finesse to handle safely. No, I haven't cut anything I didn't intend to.

But as far as quality and utility go...this is an outstanding product. If you can pick it up, you won't be disappointed. The cleaver weighs in at just under 3 pounds!

This is a huge cleaver. Especially if you are a small woman. But I needed a huge cleaver to make the work of chopping whole chicken, game hens, bones and all easier, and with two hands (love the hole at the end of the blade for fine dicing) I can chop up an entire chicken in less than 5 minutes. And I mean down to bone included sizes that are about 1/2 inch in size. I purchased this to make the work of raw feeding my five ferrets less of a chore. And this cleaver does the job. I took one star off because the hand grip could be more smoothly polished and the edges rounded so your hand doesn't get sore after long use.
