From time to time my wife bakes me a BIG baked potato. Other things being equal (us economists talk that way) I like sour cream, chives and crumbled bacon on my baked potato. But sour cream and bacon have saturated fat, which I'm not supposed to have; and who can have fresh chives around the house all the time? (Ya, ya, we tried growing them in the house; but they end up being neglected and it never works out.) The solution to my triple problem is this: there is some really good tasting non-fat sour cream on the market which has many uses, like putting onto fresh fruit instead of cream; baco bits are a textured protein (or something) with little saturated fat, lots of crunch and a perfectly acceptable baconny taste, especially when mixed with sour cream, chives, and baked potato. Last but not least, freeze dried are real chives. They could be eaten as is, but are better if re-hydrated even with sour cream. They are also great if you are trying to make a quick (maybe Saturday lunch-time) pasta sauce. Open a can of marzano tomatoes, preferably from Marzano Italy, Heat in one pot while the pasta is cooking in another; add freeze-dried chives; baco bits; a little salt; Worcestershire sauce; I like some soy sauce; garlic powder; some chili powder (for spice and cumin); crush and add some dried herbs (oregano, basil and/or cilantro); drain the pasta when still quite al dente; finish the pasta in the sauce. Serve. Eat. Enjoy.
