I've tried several different starters, some never came alive, and several tasted wrong.
I wanted a sourdough starter with that sweet tang similar to buttermilk, not the sour flat bitter taste reminiscent of milk that has been curdled with lemon juice.
This starter took off like a rocket, it started bubbling right on schedule, and my kitchen temperature averaged 65-70 degrees as we are in November, so I was impressed. I tasted it after 4 days, and it has the flavor I've been looking for.

I have tried starting my own sourdough by using a cup of a friend's established sourdough, but I just couldn't get it to work. What I really like about this freeze dried version is that I can combine it with the flour that I will be using to bake with and that seems to make all the difference. I followed the directions as listed on the package and I can't believe how easy it was to get going! I use fresh ground organic prairie gold wheat that I order from a co-op, and I currently have two large mouth glass mason jars that I keep my starter in. I cover the top with a coffee filter and then put the lid back on so that it can breathe. I bake a lot, so I keep them out on the counter, but if I'm not going to bake for a little while, I'll put them in the fridge. When they are out on the counter, I feed them each with about 1/3 cup of flour and a little over 1/6 a cup of filtered water every day. If they're in the fridge, I only feed them once a week. This package included enough starter for three batches in case something goes wrong, but I got mine to work on the first try. I taped the package closed and put it in the freezer in case a friend needs some. A very great product overall!

Let's face it - unless you're buying an artisan bread from a bakery, most supermarket-variety sourdough breads are simply not sour enough for most tastes. But by using this starter, that problem is solved! Let me offer my tips and tricks for the best starter ever:

1) Get a good crock to mix and store your starter, and follow the directions on getting started. Grow it slowly, don't even think about using for at least a month. It takes time, and I don't care who you are, you're not going to get good sourdough after a week or ten days.

2) I keep my crock on top of the fridge, not in it. Ever. The starter needs warmth to grow and develop its signature flavor, and chilling it stops growth and can harm the starter.

3) Once it's going, feed it once a week with equal parts flour and warm water. This is important! If your crock's starting to get too full, and you're not planning to use any starter right away, take half of it out and toss it. Just keep feeding it!

4) Unless you're an expert (I'm certainly not), don't try to use the starter as your sole leavening in bread. I always use recipes with a combination yeast/sourdough starter. Speaking of recipes, here's the best bread recipe I've ever found:

If you follow the simple directions, you'll experience success very quickly. when I started my packet, I just mixed it up and put it in a kitchen cupboard overnight to get it going ... worked great! I'm still fairly new at sourdough, but I love the taste of the simple sourdough breads I've made. I also love making waffles using the part that's normally tossed to make room for more flour ... and, hopefully, i'll find even more uses for it. right now, I'm looking for a way to make no-egg sourdough german pancakes. I know some egg substitutions, but I wanted to find an actual tried and true recipe that someone has used with success. anyway, this sourdough starter is very easy to activate, and, so far, mine still has only a mild sour taste which is great for the cinnamon-raisin bread I love so much. and bread pudding made from the raisin bread and topped with vanilla-rum yogurt sauce is so yummy (sweetened with stevia, of course). I honestly think I've created a new addiction for myself. lol no more regular yeast breads for me. I've read about so many things you can do with sourdough that I can't believe it!!

I have tried making my own starter before, without much success. This worked exactly as it was supposed to and makes wonderful bread. It takes a few days to really get going, so be prepared to wait until it is ready to use it for baking. The instructions on the bag are not clear as to when it's ready, and my first attempt at baking with it created a solid lump the consistency of lead, but I found it worked well after it produced a bubbly foam on top.

The last starter I made was from 2004. Sadly, it did not survive my interstate move, so I replaced it with this starter. It is much tangier than the previous starter I used and it is also very potent. I activated it on a Tuesday and was making bread with it on Thursday.
