Love the taste of this mix. Biryani is such an Indian delicacy and it takes a bit more preparation than I'm willing to do for just one person (myself). Thus, spice mixes such as these that helps me make this delicious meal even after a long day of work, is such a blessing. And what more? Spice mixes such as this brand, make very good, I mean very good food. And it turns out as if I labored for 3-4 hours myself in the kitchen! Love, love, love that!

I tweaked the recipe on the box just a little. The food would have turned up wonderful even without any of this tweaking. But I just got used to this method, so just stuck to it when I saw the amount of spice included in the box.

My tweaked recipe, for your reference:

1. I did 2 cups of basmati rice w/out salt or lemon juice, and cooked it first in a rice cooker.
2. While rice was on its way, marinated about 2 lbs of chicken thighs (small pieces) in yogurt + lemon juice and marinated until the rice finished cooking.
3. Then to cook the marinated chicken, I fried 4 cloves, a small stick of cinnamon, 1 tsp of fennel seeds and 1 medium bay leaf in butter (3 tsp) and then added the marinated chicken to it, added some chicken stock I had on hand (used-it-'casue-I-had-it kind of deal) and cooked until the meat was well done. Just added enough fluid to cover the chicken. Once cooked the gravy turned out thick yet still 'gravy'ish - not dry.
4. Then added cooked rice to the cooked chicken mix, mixed well and let it sit on low heat for about 7-10 minutes.
