I purchased this a while back (summer I believe) but I finally pulled it out last week to bake cookies. We use the actual Silpat brand baking mats at school (I attend Sullivan University's Culinary Arts Program) and there is NO DIFFERENCE!!! They keep my cookies from sticking, they brown evenly, and cleanup is a breeze!! I just purchased a second so I can have two pans going in my oven at the same time!! I can't wait to purchase the 9" rounds for cakes!

UPDATE!!

While researching, I just realized that Sil-Eco is a division of SILPAT!!! It looks like Silpat is in stores while Sil-Eco is exclusively for Amazon.com and Kitchen Collection (at a fraction of the cost!!!)! How cool is that!! So no wonder there's no difference between the two!! I'm so happy right now!!!

I was wondering what the difference was between these and the Silpats that my friends use--as it turns out, only the price! These work great--I've used them multiple times for all sorts of breads--profiteroles, challah, scones (not cookies--I don't bake them that much, although I can't see how these wouldn't work for them)--and I've never had a problem with them. I just rinse them in some soapy water, and if there's some extra grease/flour on there, I wipe it gently with a moistened towel, and it's as good as new. It's also worth noting that whereas for many cookie sheets you have to wait for the sheet to cool before baking another batch (say, if you're making a bunch of cookies), these sheets are very quick-cooling, cutting down on a lot of cooling time.

To be honest, I was surprised to find such a great product at a fraction of the price of the Silpats. I didn't realize these were made in China, as one reviewer points out, but that didn't necessarily matter to me. It might to you, and you should know that they are. That said, I feel I can definitely recommend these, especially for people who are tired of buying roll after roll of parchment paper. I should say, I haven't exactly gotten rid of the parchment paper just yet--it's good for lining the bottoms of cake and bread tins. But these are exactly what's needed when you're baking either free-form breads, or quick-breads.

These work great for Induction Cook Tops. I place them directly over the circle that indicate the burner's position. They keep from scratching the ceramic cook top. It is really nice that they are sticky and don't slide. The pots and pans heat well using them and cleanup is much easier. The induction transfers right through the silicone pads with no problem. The pads only get warm and they serve to catch spills.

I gave them 4 stars because they were a little expensive. I bought 4 form my stove and I'm glad I did.

NOTE:
I wished they had a larger size for the biggest burner, but the liner works well enough for it.

I have an original Silpat that I got as a gift several years ago. I have been looking for a less expensive alternative, as I like to bake and cook and often have multiple trays of things going at the same time. Other silicone mats stain, are too stiff, or don't fit right.

I have commercial grade pans, so the sizing for this is PERFECT for a quarter sheet pan. it doesn't slide, doesn't stain, is thin and flexible, and washes up easily with soap and warm water. I will be buying more to outfit all of my cookie sheets in their various sizes. Love this mat!

This liner turned out to be a little larger than I expected for a new toaster oven pan, but still smaller than the dimensions shown on the package. The package says 8.25 inches by 11.75 inches. When measured with a ruler, the mat was only 8.0 inches by 11.675 inches. It's sized to fit a 9- by 13-inch baking pan. I trimmed off some of the brown border so that it would fit my toaster oven pan better.

Food doesn't stick, and it does wipe clean after use. But after a few weeks of heating frozen turkey breakfast sausage on it every morning (375 degrees for 8 minutes), it had unappetizing brown stains that don't wash off. After 3 months of daily use, the discoloration has spread over most of the liner. I don't believe this has affected its function, but I wasn't expecting silicone to discolor.

I love this mat! Good quality, FDA and NSF approved. The medium jelly roll size is 14.5 by 9.5, so it fits perfectly in my 15x10 baking sheet.

I bought two of these to bake a layer cake in 9-inch round pans. They are slightly too large, but I was able to fit them into my pans. I hadn't realized how difficult it would make them to remove. Not only were they tough to remove from the pans, but my cake layers stuck to them like they were glued on. Use parchment paper, and save yourself the headache of hassling with these liners.

To begin with, I use mine a lot and in the toaster oven. I don't heat my oven very high, but I do cook things like potatoes and chicken strips on it, so if your use is different, you might have different results. Having said that, this little liner has saved me a LOT of aluminum and parchment paper to line my pan and it works really well. It does begin to change color, though and will turn brown. I'm not sure if it's the oils penetrating the silicone or what. After a year or so it also started to crumble a bit on one side so that the fibers were exposed in the middle. I've simply flipped it over and use the other side, but I had hoped it would last a little longer. Overall it's a great way to cook food and to line a pan.
