After eating some muffins which were covered in non-stick coating from the pan I baked them in, I vowed never to use non-stick cookware again. We had a hard time finding a non-non-stick/uncoated pizza pan, but finally discovered this one through Amazon. It works great - we make our own pizzas from scratch at home and it works with thin and thick crust alike. We have had it for about a year and my husband is not exactly delicate with our pans, and it has held up well. One reviewer remarked on the thickness, and it isn't thick, but I don't think you would want a thick one, seeing as many pizza recipes call for the pizza to be set directly on the rack in order to crisp the dough nicely. I assumed that's the point of the holes in this pan... We don't use Pam or any non-stick spray, and we haven't had any problems with sticking. A great product!

The Chicago Metallic Pizza Crisper is a commercial-grade sheet metal pan that's perforated with 1/4" holes across its surface. The holes provide air circulation that helps cook a pizza crust evenly from center to edge. Without this ventilation - if you use a standard cookie sheet, for example - your pizza crust will cook crisp on the edge but remain underdone in the center.

A more common way to evenly bake a pizza crust is with a porous baking stone, such as 1 2 or 3. These will produce excellent results, but are more difficult to manage in the kitchen than a crisper pan. In particular, after building your pizza it can be tricky to transfer it to a preheated stone. Removing the pizza after it's cooked can also be difficult. The best answer for working with baking stones is to use a peel, such as 1 or 2, for inserting and removing pizzas from the oven. The downside for many kitchens is storage - where do you put the inch-thick stone and unwieldy peel? And that's after you let the stone cool so it can be washed.

A pizza crisper pan may not create the exact same result as a baking stone, but it does evenly bake a pizza crust.

We have gotten rid of nonstick cookware the past few years, and this pan is a rare find when almost everything has that awful coating. It works well, and all I've done is use cooking spray. No sticking problems, and no chemicals either. I would highly recommend this.

My family has recently begun making homemade pizzas frequently. This is a very good product and produces a crisp crust. Most importantly, it is uncoated. I don't like using the non-stick products at the high oven temperatures we use for pizza. We have not had any trouble with dough sticking to the pan or getting into the perforations. I highly recommend this product and will probably be purchasing another one myself.

I was looking for one of these without the non stick coating. I never use any product with non stick coating. So far this works great and excellent quality. Cleans nicely too but I hand wash and not use the a dishwasher. Highly recommend. FYI - go and check out the recent lawsuit against Dupont the makers of Teflon (chemical C8). Dupont is evil.

I don't like chemical covered bake ware. All of my baking pans and sheets are Chicago Metallic brand. I am as equally impressed with these pizza pans. No chemicals... just good old fashioned metal. I spray mine with a light coating of oil or rub a good quality organic oil on them... stretch out my dough (the oil actually helps in the stretching as the dough will "stick" to the pan without springing back), top and bake at a nice high temp and the pizzas turn out amazing! And, like all of Chicago Metallic's Commercial II Bake Ware... as long as you lightly oil and then let cool for a couple of minutes... *nothing* will stick on them. Don't use a horrible scouring pad if something does stick... soak in some dish soap and water and then wipe clean with a sponge or cloth and these will last a lifetime.

This pan works well and arrived in great shape. Used it the first day I got it. Since it is uncoated, I did not have to worry about using it at high temperatures. Plenty sturdy and heavy enough. I can't see how anyone would call this thin or flimsy. I also like the size for my wife and myself. It fits well in the standard home oven. You also really don't have to use any kind of seasoning on the pan. Just give it a light washing and its ready to go. Our pizza tonight was great!

Fantastic tool - it really helps! I spray it with oil before putting on the dough. Works great and allows me to build the pizza right on the pan and then put the whole thing right into the oven. If you are having trouble getting the pizza off the peel and then smoothly onto the pizza stone, I highly recommend this item. Pizza is one of those meals that's surprisingly difficult to get right - this pan has greatly increased my success rate. Happy eaters all around!
