Sweet dairy whey is essential for a successful loaf of gluten free bread -- it gives the bread that bouncy, supple texture that reminds you of real bread. We stumbled across this ingredient in our fantastic 63 cent used GF baked goods cookbook find. Best 63 cents we ever spent.

In breads and most muffins, this ingredient alone makes a HUGE difference in moistness and lightness of crumb. That it adds protein and helps with leavening is a big bonus. It also helps cakes and breads to retain their moisture, one of the huge problems in GF baking.

We were using buttermilk powder for leavening and crumb correction, but we tend to like the sweet dairy whey better because it doesn't add any extra flavor to the baked goods. Oh sure, sometimes buttermilk powder is exactly what's needed because of its lovely flavor. At other times, the sweet whey is the better ingredient for flavor and texture.

In all of the newer GF bread/cake/cookie/muffin cookbooks, not one of them mentions this amazing ingredient. OK, our used/like new 63 cent cookbook is Easy Gluten Free Baking by Elizabeth Barbone.

Although we improvise a lot and now develop our own recipes for pretty much everything baked, we learned a lot from this wonderful book especially in the world of cakes and cookies. Our GF cakes fool all of the cake snobs thanks to Elizabeth's guidance. Many of the book's recipes are the equivalent of gluten free, white flour, junk food. What it means that those who miss these foods, your suffering is over. Elizabeth's book even includes, yep, a GF Twinkie recipe. Yowza!

Bob's makes consistently good products that are generally reasonable in price compared to others. If you are baking GF you will use this, but in very low volume. I've been baking GF for almost 2 years and have yet to finish my first bag; I've come through cases of rice flour, potato starch, and tapioca starch, though.
Start with one package, be prepared to store it tightly closed and in a dark dry spot, and buy on price.

I bake regularly using whole grains. Breads come out lighter, have better texture and stay fresh longer with whey. If you add extra gluten to your bread, you may wish to decrease it when using whey. I also add powdered lecithin 1T/2lb loaf.

I can find Whey Protein powder everywhere, but Sweet Dairy Whey is no where to be seen locally. I used to live in Oregon where the Red Mill is located. I miss not being close so I can get anything I want more easily. Great Products.

I received this product quickly and it is what I wanted. The only thing I would say is that the picture with two bags is somewhat misleading. I read the description stating there was only ONE bag. I do feel that the vendor should resubmit a photo with just one bag.
