> COMPARISON WITH Bob's Red Mill Barley Hull-Less Whole 2Pk. Both nominally cook in about 1 hour. The Hulless can be cooked at least 3-5 hours and remain chewy. The Pearl is softer than the Hulless after 1 hour, and softens more if you cook it longer. The chewiness of Hulless is a nice contrast of texture as a minor component of a soup or in a salad, etc. The Pearl is tastier and more pleasing to the palate as a bowl of warm cereal, or as a major component of a dish. The Hulless is said to be healthier.
> Recommendations: If this is your first barley purchase, then go for Pearl Barley. When you've decided that you are a Barley lover, try the Hulless.
> For two, I measure 1/4 cup in a 1-cup measuring cup, add water to a total of 1 cup, and then simmer on a low boil for 1 hour. That produces about 1 cup of cooked barley. You don't have to wait for the water to boil before adding the barley. Do not drain the barley if you plan to use it in a soup or stew. Drain and rinse if you plan to use it in a salad, such as a bean salad. Or, if you've cooked the barley in advance, just turn off the heat and leave the barley in the pot, and it will absorb any remaining water over the next hour.

This doesn't seem like pearl barley at all - is has a brownish hull on it that that cooks up more like whole barley. It's fresh, of course and tastes great but be prepared to cook it for a while before it's edible. Next time I try to cook it I'm going to soak it for a few hours first and see if that makes it more tender.

After some initial trial-and-error on cooking, now I love this pearl barley. I like my pearl barley more soft and less chewy, so after increasing the cooking time about 20-30 minutes, I'm very satisfied. I recently used some in a sort of beef-and-barley soup that was delicious. I cooked the barley in beef broth first, until it was almost the texture I wanted, then added leftover pot roast (already cooked), mixed veggies, onion and garlic -- a few spices -- and... perfection. We ate that soup for three days (big pot of soup). I've also eaten it plain, as one would rice (not my favorite way), and in vegetable soup (very good). It has a slight flavor of it's own, which I like, but easily absorbs the flavor of the broth when cooked in soups and stews.

Used a couple times and this pearl barley is great. Not sure why, but some barley seems to break down more, especially if I freeze soups for eating later. This cost a little more than the local store brand, but I like it much better. I'm a Bob's Red Mill customer now.

Good stuff - used this is soup recently in place of pasta - I have to watch the carbs. If you had prepared soups as a child and hated the slime factor, don't turn your nose up until you have tried making your own soup with this barley. Have yet to cook it as a stand alone grain. I recommend farro for either an entree or side dish. This brand also sells that grain, too.

This is wonderful barley. I agree with previous reviews that the barley should be cooked longer than what you buy in the grocery store. Also, something nice to know is that it can be cooked for more than two hours (which I did when my corned beef was undercooked and tough, to say the least). Actually, I probably wound up cooking the barley for 3-4 hours, trying to get my corned beef edible (I think my problem was the corned beef, but the barley stood up the the challenge). Bottom line...I will order this barley from now on.
