It seems allthe reviews are from Vegans...so here's the real scoop. AMAZING. We happen to live in Hudson Valley, NY so a 45 minute drive later and we were at the actual farm. Let me tell you...top notch! The staff was not only knowledgeable & attentive, but heartwarmingly genuine in how the ducks are cared for. The USDA inspector held the door for us, so they are 100% on site. The froie GRAS...OMG. We bought this, cut it into servings & vacuum sealed to freeze. Nothing more succulent & delish than making your own. We also bought their duck legs & a breast. Haven't made the breast yet, but I made duck confit w/the legs and we are hooked! Fresh, delectable and five star restaurant quality!!!

OK, I've read enough of the negative stuff. How about this product. It is great if you want to pay the price and serve seared foie gras. After all over several million people do enjoy it. Should I name other "delicacies" of the same nature? I've been to a foie gras farm and seen it for myself. Have you ever been to a chicken slaughter house or beef slaughter house. Do those of you who review on cruelty alone and not the product think you would enjoy watching chickens with broken legs and wings trying to move around. As a chef, I have seen it all. Quite obviously those of you who claim cruelty for this one product have not. The product is excellent. It's up to you whether you buy it or not. Fact is, if you did your homework, you would be amazed at just how much extensive damage to the environment eating meat of any kind does to the planet. The product is great for those looking for foie gras, for those of you who are not, just don't buy it.

This is one of the most delicious food you can eat! People talk about the negative things while they walk around in leather shoes caring their leather purses paying for things out of their leather wallets! Hypocrites! Based on the fact that this is a free country no judge or any others should be allowed to force their opinions down everyone else's throats! It is a delicacy and enjoyed as such!

It was a special occation so my wife and I went out for a nice dinner in Glouster, MA; near our home town in Massachusetts. The wait staff told us that the special of the day was the Award Winning Hudson Valley Foie Gras. My wife was not a big fan but is now!!! OMG it was this off the hook!! On Point as they say on a popular TV cooking show. Great Product!
So we decided to go to their great web site to check it out. The site works just great. Placed my order and the yummy Foie Gras arrived no problems. My wife is now a regular, top shelf product. Thank you Hudson Valley!!! Keep up the good work!
Sustainability is a term Hudson Valley Foie Gras takes to heart. This 200-acre farm in Ferndale, N.Y., welcomes visitors to meet the Moulard ducks that are raised humanely, cage-free, and are hand- (not tube-) fed, resulting in a healthier duck and ultimately a better product. The farm is unique in that all stages of production, from breeding to packaging, happen in one location. In addition to classic foie gras ($89/1.5 lb.), the farm produces and sells terrines ($52.75/8 oz.), smoked duck breast ($39/1.75 lb.) and a Foie Gras Canapé Kit ($49.95), which includes foie gras mousse, fig syrup and petit toasts.
