OMG, this is so delicious. I ordered this online as it has become increasingly difficult to find locally. I didn't realize that I ordered so much of it, so we cut it into one pound section and froze it in vaccum pack bags. The first night we fried some pieces up to compare to our usual brand and this is so MUCH better. Not as salty as what we usually get. To quote my son "This is to die for!"

This pancetta is delicious! I was leery about having a perishable shipped to me but took the chance because the price was right. Folks, don't waste your money buying pre packaged second rate pancetta in the grocery store.
We cut the pancetta into family serving sizes and put in the freezer. It works great! Now we can have pasta carbonara whenever we want it!

I really like this product. The vendor really needs to watch the expiration date. They sent me an out dated product. They emailed me a shipping label to return the product. And they sent me a new one. This one was in date. It just delayed the date that I could use the Pancetta Beretta.

I boil slices of the Pancetta for about 10 minutes and then rinse it with water and chop it up in small pieces and then fry it up and then freeze it. When I cook my greens, I put some Pancetta in with the collard greens and it is really good.

I will buy this again! With a little work, it can all be cubed to 1/3", cooked until very crispy, and frozen all within a few hours. Great quality! I use it in so many food items that I do not have time to mention them all (mashed potatoes, salads, mac and cheese to name a few). When my brother saw it, I explained what it was. He took a second to look at this 6 lb. monster and said, "BACON". I relied,"Right!" I live alone and it lasted me about a year to eat it all even after giving half away. Now, it's about time for more!!!

This was my first time to try Pancetta. The first time I used it I just sliced off a piece and fried it and as some others said, it was very salty. The second time I chopped it in small chunks and soaked it in hot water for a half hour, rinsed it a couple times and dried it on paper towels in the fridge. This got all the excess salt out. To use it I had to fry it for quite a while to cook the fat down (it's very, very fatty). I used it in a pasta recipe and it was good but I'm not sure it's worth the trouble. The meaty part was a little tough too. I probably won't buy it again.
