My wife and I are avid ice cream makers. We have had the KitchenAid Ice Cream Maker Attachment for years now, and have been whipped up every flavor you can imagine, including inventing some of our own. We make real, gourmet ice cream, packed with heavy cream and luscious ingredients--not healthy substitutes. Usually we just store it in big tubs, but when I saw these Ice Cream Bar Molds I thought they looked like fun.

And fun they were! Easy to use, no muss or fuss, and they popped out of the mold giving us perfectly shaped ice cream bars on a stick. Making ice cream in bar form let us do some other fun things as well, like adding a final shell to the ice cream. We made some with Green Tea powder, and some with cookie crumbs. This is a little trickier, because the mold is only one-faced so it can be hard to get the balance right, but oh well. It's worth it even if they don't come out perfect.

I tried a few of the recipes and they are OK, but I like ours better. I like how the recipes measure in grams instead of cups--measuring by weight is almost always a better way to go. If you aren't used to that, a digital scale is your friend, and should be standard issue in every kitchen.

About my only complaint is how small they are--most of our recipes make quite a bit of ice cream, and you only get four molds with these. It's not a big problem--we just make a few bars and store the rest of the ice cream in the usual tubs.

I've notice a lot of the reviews on here seem to be using these for everything other than making ice cream bars--juice popsicles, yogurt bars, smoothies, etc ...

This is a refreshing way for us to increase our intake of fruit and vegetables. I'm enjoying turning our blended smoothies into frozen popsicles for the kids. The silicone is sturdy and it gives me peace of mind not having to use traditional hard plastic molds that may contain BPA.

So far, we have been washing and reusing the wooden sticks. Once frozen, I store the pops in a silicone bread pan that sits in our freezer. I am now refilling the molds and emptying them daily as part of our (nearly) summertime routine.

Ideally, I would have liked a recipe booklet that was more substantial and user-friendly. Converting the grams was a challenge until I finally bought an electric food scale that converts to metric.

Three of the recipes call for fresh cream, so I tried using the regular cream from the store. However, the cream separated from the milk, rising to the top during freezing, creating a softer top layer to the frozen pop. The bottom layer came out syrupy sweet.

Another recipe calls for 10 gelatin sheets(?) I haven't seen gelatin in the US sold in sheets, so I was confused regarding the amount. Also, I looked through the booklet to find out how to make the chocolate topping to cover the outside of the vanilla pop. The directions regarding this are minimal, so I will have to look for a different source.

The exceptional quality of the molds themselves inspires me to search for even more healthy, creative recipes that we can use. It's fun and easy for the children to help prepare.

These simple little silicone molds aren't for popsicles, because you fill them up from the side and insert the popsicle stick into a skinny hole which can easily dribble liquid out the side if the filling is too runny. Cream-based liquid works fine, but juice requires a two-step filling process where you fill it half way, let it freeze up and over the hole, and then fill it again - too much trouble for me when there are already numerous popsicle molds on the market. However, these are a lot of fun for making ice cream bars which can be difficult to get out of traditional popsicle molds.

The downsides:

These need to be set carefully in the freezer in a perfectly level position like ice cube trays so they don't spell. The two trays don't stack gracefully either, so it does take some freezer space and a little preparation to make sure you have enough level surfaces to put them on.

The instruction booklet supposedly has some recipes that we can use for making simple ice cream bars, but unfortunately all the measurements are in grams, so for me it was just too much trouble to figure out how much milk, sugar, etc. I was supposed to use. I spent about 10 minutes googling ice cream bar recipes, but all I found were recipes for how to dress up some store-bought ice cream into ice cream bars, no recipes from scratch. So if you are relying on the little instruction booklet that comes with these bars to know what to put in the molds, make sure you are ready to deal with measurements such as "50 g of milk".

The upsides:

These molds are easy to put in the dishwasher.

They are easy to fill and put the popsicle sticks in.

It was easy to get the ice cream bars out of the molds because the molds are so flexible.
