I must say that I have never been a red velvet type of gal, and after my daughter and I were diagnosed with Celiac disease, I quit almost all sweets. I found this mix at a local store and decided to try it, because I was starting to crave sweets. Well, I LOVE THESE CUPCAKES!!!!! They are so moist and yummy!! I just can't even put into words how great they are! SO, I bought the rest of Heartland Gourmet's mixes, and so far the lemon cupcakes and the carrot cake(never liked carrot cake until this!!) are just as wonderful!! I can't believe these things are sooooo yummy!!

I doctored up the recipe and the comments I received about these cupcakes were amazing!!! My daughter is gluten and lactose intolerant but loves chocolate! I found these at a local Marshall's ($3.99) and decided to make them for her 3rd bday party. Here's what I did- I substituted the vegetable oil for organic extra virgin coconut oil, I also added a to-go container of organic apple sauce (for extra moistness). When the mixture cooled off after 30 minutes or so I added a handful of chocolate chips before scooping into the cupcake liners. I filled the cupcake batter to a little over 3/4 full since gluten free doesn't rise as much. For the frosting I just used a combination of confectioner's sugar, butter, coconut oil, pure vanilla extract to get a thick consistency. I thought I would miss a lot with no "cream cheese" frosting BUT I think this combination came out even better! No way will I ever pay $2.50 for a gluten free cupcake again!

I can't speak much for the actual box mix and frosting recipe found on the box but with the add-ons I made these were out of this world yummy! I give 4 starts instead of 5 because I can't rate this fairly since I didn't follow exact instructions on box.

My recipe yielded 18 regular sized cupcakes

Since Marshall's doesn't always carry these in stock it is well worth paying 5.99 to get them delivered right to your door.

I bought two boxes to make 24 cupcakes since after reading reviews that ***1 box only makes 12***cupcakes. I followed the instructions to the "T" and they came out tasting moist and flavorful. I personally couldn't tell they were gluten free boxed.

I made these for a 4th of July BBQ (with cream cheese frosting) and everyone raved about how delicious they were. The cake is moist and delicious and tastes like its made from scratch. Also, this tastes like real red velvet not the crap that tastes like cheap yellow cake with red food dye

I am gluten intolerant so was delighted to find this company which makes delicious gluten free cake mixes. This one is simple to make. It is easy as a quick bread. It bakes wonderfully well and comes with a recipe for cream cheese frosting, on the back of the package. If you make a mistake and put your cream cheese into the cake mixture, they will turn out like brownies but they will puff up too much while baking (ha). I think we invented a new variation. I make a simple powdered sugar frosting for this, vanilla flavored. It would be fun with some sprinkles. : - )) You can make cupcakes or a 13 x 9 inch cake.

I made these into cupcakes for my daughter's 15th birthday (she's gluten intolerant), along with a set of cupcakes from the King Arthur GF chocolate cake mix. Honestly, I liked the King Arthur cupcakes better. These were still pretty good, but the texture was a little gritty (often the case wit GF, even though I let the batter rest for 10 minutes before baking to help the liquid absorb and reduce grittiness) and the tops collapsed just a bit when the cupcakes cooled. Not bad, and I would probably give 3.5 stars if possible. I will go for the King Arthur next time, though I do have the Heartland Lemon and Carrot Cake mixes to try and am looking forward to those...
