This biscuit mix from Moon Rabbit is absolutely "The BEST!". If you have to stay gluten free, and you're craving 'sausage biscuit', this will satisfy that craving!

Since my husband does not have to stay gluten free, here is what I do to make myself a serving each morning:

For 2 big biscuits - Oven at 375 degrees

2 heaping table spoons of Moon Rabbit Biscuit Mix
Heavy cream to moisten and mix
small sprinkle of salt
small sprinkle of pepper
small sprinkle of cayenne pepper (I like a little 'bite' to my biscuits)

Mix in bowl, adding enough heavy cream to moisten and make mix hold together. The bag says to use buttermilk, but I never use buttermilk in my ordinary cooking, so I did not have any. I use heavy cream and it's wonderful. Now - I cannot give a specific amount of heavy cream to use because, honestly, some days it takes a lot and some days it takes just a bit. ( I think gluten free mixes are sensitive to the humidity in the air; if you've ever worked with gluten free mixes you know that it's totally different from working with ordinary flour!)

When the mix is moistened enough to hold together, divide in half and pat out 2 hand-made biscuits and put them on the baking sheet. Bake for 10 minutes at 375 degrees. After 10 minutes, take biscuits from oven and take a knife and open them up, and then bake for 7-8 minutes more. I do this because I don't care for high, doughy biscuits. The resulting biscuit will be more of a crispy-crunchy biscuit, rather than a 'cat's head' biscuit.

After 7-8 minutes, the biscuits are done and ready for your sausage and some honey!

It's WONDERFUL to be able to eat a sausage-biscuit like a normal person! I can't say enough good about this mix!

Recently went on a Paleo diet and totally missing the breads. Then I found out I am severely allergic to eggs bummer. We met the owner in Whole Foods he had samples of all his products there and they were amazing. Being Paleo this is great no wheat products and totally gluten & soy free. I mentioned me egg allergies and he pointed me to an egg substitute flaxseed. So I tried the combo using almond milk, flaxseed and mix and the biscuits and waffles were a huge hit.... You really should try this product you won't regret it I PROMISE.

These biscuits and scones are amazing. I've used this mix several times (and many of their other mixes)and they always turn out great. I've served them to friends and they cannot believe they are gluten free.

I was blown away by the quality of this mix. It's a little messy to work with, bout very well worth it. I added chopped white chocolate and dried apricots to jazz up the scones, and they're SOOO good. Even my gluten-loving boyfriend was impressed enough to not only eat several, but also ask me to make them again. Can't get a much better recommendation than that. I've re-ordered!

I love scones and have worked hard to find a good gluten free recipe since I discovered my sensitivity to gluten. Someone gave me a package od Moon Rabbit and my search was over. I make it in my food processor, using frozen butter and add dried cranberries, blueberries, or raisins. The mix is wetter than my usual scratch recipes, so I spoon it into my Nordic Ware mini scone pan like drop biscuits, rather than roll it out. The package is generous and the mini scones are a good size. This one is a keeper!

I don't know why I have to give something this bad a star. Ignore the star and imagine no stars, that's how bad this was. The texture was terrible when baked. I don't know why anyone would give this a good review. Yuk. Do we just believe that we can suffer through such a food in order to have the experience of what we really want, i.e. a biscuit?
