Bear with me a moment: I want to start with the name of this product. "Gilroy Farms" evokes happy thoughts of Gilroy, CA, the unofficial garlic capital of the US. They grow wonderful garlic there, and some of it ends up in jars and is quite good.

They don't grow ginger in Gilroy, nor in Maryland, where McCormick & Co. has its headquarters. As far as I know, ginger production in the continental US is about zilch. The ginger in this product, according to a McCormick rep, comes from China. So the "Gilroy Farms" branding seems a little disingenuous.

It's hard to find alternatives to fresh ginger, though, so I'm always checking out "minced ginger" products (in jars). This one is ok. Definitely not great. It's about two-and-half stars--I took half a star off for the annoying branding/packaging.

The texture is very fine (more like you get from grating fresh ginger), and the flavor is pleasant without much heat. Most of what gets labeled "minced ginger" is more along the lines of ginger paste. This is much softer, with coarse particles suspended in a liquid that includes partially hydrogenated soybean oil, citric acid, and unfortunately 0.1% potassium sorbate (a commonly used preservative with a slightly bitter aftertaste).

If you have a sensitive palate and love ginger, bypass this one and head straight for the Ginger People or another good Australian supplier--or any supplier who steers clear of preservatives. I have no idea whether they're good for you, bad for you, or whatever; they taste bad. Period.

If you want something (anything) to use in place of fresh ginger in baking, first try soaking some high-quality (fresh) dried ginger in a little water and lemon juice to rehydrate it.

This product was not as good as I hoped it would be. Several years ago I bought Spice World minced ginger and it was excellent--very similar to Spice World minced garlic, which I love and use all the time. Mccormick's ginger tastes great and is good to use as flavoring in cooking, but it's not like chopped fresh ginger--a very large amount of liquid is included.

Much easier than grinding your own from the ginger root. We don't user ginger every day so the roots we bought keep growing mold. So we switched to this and it's great. No more waste, just keep it in the fridge after opening. Oh, and it tastes like ginger, what did you expect.

I like using bottled ginger since I don't use ginger very often. I used to buy them fresh, but would end up throwing away the rest away after I used what I needed. Now I can use what I need, store them (the jar one), and take them out of my frig for my next recipe. The jar is much bigger than I need, but it was the only one I could find.

I am simply amazed at how dense the ginger is. I was expecting a watery slush like most bottled ginger but this is virtually dry (though still moist & fresh) so it's really concentrated in flavor and adds great depth to dishes. This will be going on our Subscribe & Save plan!
