Directions

Preheat oven to 350F. Grease a 9" round cake pan, cupcake or loaf pan.In a medium sized bowl combine: 1 cup Milk (Non Dairy or Dairy), cup Oil.Slowly whisk the Baking Mix into the liquid ingredients and blend until smooth, about 10 seconds.Pour batter into desired pan, smooth with spatula to make even. Bake: 25-28 minutes for cake or loaf. 18-23 minutes for cupcakes.Let cool for 15 minutes, top with Wholesome Chow's frosting and serve!

Flavor Name: Hi-Protein Pancake Mix
I really like this mix. I use an egg and almond milk with the mix, and if I'm feeling daring a little pumpkin pie spice mix :) I find the texture similar if not a little better then most GF mixes out there, but unlike many pancake mixes that are just starches and carbs this one has lots of protein! The last highlight of this mix is it comes with a 'single serve' scoop that portions out the dry mix to make a single serving portion. As the only GF person in my house I love this helpful tool! I would highly recommend.

I have been a baker from scratch since I was a teen, and have always been horrified by the ingredients and results of cake mixes. I recently caved and tried this brand because, as an adult, I now have gluten issues, and I am aware of how impossible it is to find ANYthing out there that is both gf and also organic--not to mention also gmo-free (and yes, actually baking a decent gluten-free cake is extremely difficult). I first purchased the chocolate cake mix, fell in love, tried the chai spice cake mix, was a bit disappointed, and finally purchased the vanilla cake mix--and fell in love again. what I have done is to turn this mix into the spice cake that I originally was imagining, by making some spiced pecans and then pressing them onto individual spiced cupcakes I have made with this mix (by following the instructions and adding a tsp of the same spice I used for my spiced nuts), and the result has received so many raves. I have a bit of a lactose issue, so my liquid was a homemade cashew milk (do not get scared off by this--cashew milk is the easiest nutmilk to make and requires no nutbags or other doodads). I also used walnut oil as my oil. I love my fluffy, nutty cake, but I know you will get great results with whatever milk or liquid you choose and whatever oil. this mix makes a lovely cake that you can use as a fuss-free base to jazz up your own way (lemon and poppy seed? apple? carrot? pumpkin?) the possibilities are endless. just get creative! : )

I wanted to make a cake for my daughters 1st birthday that was not so bad. She is allergic to eggs so vegan was a must....but gluten free AND organic were a definite plus!!! I looked in whole foods, fresh market and publix and non of them had vegan, gluten AND organic. I came across this and read the reviews...it thought I would give it a try. OH MY GOODNESS!!!!! This stuff is amazing and I don't even like chocolate cake! seriously the best cake I have ever had...period!!!

I use almond oil and almond coconut milk from breeze for the added ingredients to the mix.

I used a recipe for vegan frosting and made it pink colored using frozen strawberries blended and simmered down for the middle layer. I also use red Indian food coloring (natural avail at whole foods) for the bottom layer.

Flavor Name: Hi-Protein Pancake Mix
I was nervous when I tried this product, to be completely honest. I was afraid it was going to be a waste of money. Sometimes, the risks you take truly pay off. I've used this for chocolate chip pancakes and banana bread, and it tastes WONDERFUL. The texture is good, it's not super dense like most mixes heavy in rice flour. The best part about it? You don't crash as easily when you eat things made from this.

Just a heads up, when you make pancakes, if you're used to sweeter things, the pancakes will leave a bitter taste if you don't add sugar. I use one and a half teaspoons of sugar/honey (or maybe a half teaspoon of stevia), one and a half teaspoons of cinnamon. I haven't tried stevia yet, so that's just an estimate. You'll have to taste it before you make it. But just a little bit of sugar is enough to take the edge off. It's great for anyone who wants to add more protein into their diet but can't have gluten or dairy and such.

Being a celiac is one thing, but adding on the fact that I'm also allergic to eggs and dairy complicates matters quite a bit. This was bought on a whim, believing that there is no way a vegan gluten free cake would be at all edible, It was delicious! The mix itself was a snap to mix up and pop into the oven. A glorious smell soon filled the kitchen. Truly it was agony to have to wait for the cake to cool enough to cut into it. Hoping that it wasnt just a cake that smelled great but tasted terrible, yes that has happened to me. Heavenly taste and texture and thats without frosting! If like me you cant safely consume gluten or eggs, give this mix a try, I believe you'll fall in love with this brand as I have.

Flavor Name: Vanilla Verified Purchase
for being gluten free and dairy free and all that I was generally happy, the consistency is to be expected from gluten free baked goods...dense. I made these into cupcakes using Trader Joes unsweetened coconut milk and extra virgin olive oil and used the frosting packs from WC (made with coconut spread from Earth Balance) with the vanilla frosting these tasted like a good gluten free treat, but the cupcake standalone was utterly flavorless. It needs enhancing, maybe if I have a need to purchase this again I will add some organic vanilla to it. Im going to give the chocolate flavor a try today so I will review that later...

UPDATE: Just made the chocolate cake mix...tossed in a handful of chocolate chips and baked it in a loaf pan. It was SO MUCH BETTER than the vanilla, it was fudgy and moist with good flavor on its own, though we did frost it with the WC vanilla frosting mix. and if you make it in a loaf pan the directions say something like bake for 28 minutes, no it takes about double that time.
