My shrimp scampi is delicious, but I have unable to get the oil and non-oil elements to fuse satisfactorily. I knew I needed an emulsifier such as soy lecithin. I had some leftover scampi that I warmed after adding a mere tablespoon of this powder. The resulting sauce was perfectly blended with not a bit of flavor alteration. I was amazed. This is a wonderful product. Caution: once the package is opened, the exposure to air will soon turn the powder into a gooey glob that's useless. Got great response from the manufacturer about proper storage. Once opened, the product must be in an air-tight container. I decided to use Food Saver vacuum-sealing which I think will keep the product useful for quite some time.

You can make a lot of foam with this package. Just add to a strong flavored liquid (about 1% by weight), dip in a hand blender, and you're a modernist chef. I also hear it's healthy, can't comment on that.

Love using this to make my gravys and other (should be) emulsified foods taste soooo much better. Plus, its a healthy way to make things taste really indulgent! I gave it 4 stars, because the package doesn't contain any usage instructions, so you have to figure out ratios yourself. You don't need much, so this is basically a lifetime supply. The powder is much easier to use than granules that I have gotten in the past.

Could very well be a good product, but in the description it claims to be OU certified kosher, yet the package I received was NOT certified kosher. Amazon made good and accepted the return at no charge to me, but it means I do not have Soy Lecithin in time for the event I needed it for. I am extremely disappointed to say the least.

Nicely made, dry and no clumps. Very useful for a variety of kitchen chores but should not be confused with liquid lecithin. They have different qualities and the well-stocked kitchen will have both.
