I read all the reviews...the good, the bad, the great, etc. I was a bit leary until I tasted this - super awesome! Yes, I could sit and eat it by the spoonfuls right out of the jar (but I don't!!). Just ordered two other flavors to try (Pumpkin and Honey Pecan).

Here's how I use the coconut butter. I place 2T into 4 shots of espresso, add 2 scoops of protein powder, and some ice. Blend it (love the Ninja blenders) and this is my morning breakfast. Prior to using the coconut butter I was using almond butter. The coconut butter is really excellent and I LOVE the vanilla cake flavor. Every morning I lick the spoon clean! Highly recommend this! I've also added it to a cold/frozen protein smoothie and the flavor is excellent!

I follow the 'Digestive Health With REAL Food' book & as a result decided to try Nikki's for a sweet fix. So far I cannot safely digest any of their butters that contain nuts, so I've been sticking with their Vanilla Cake Batter for nearly a year. It is awesome to be able to safely have something sweet without having to worry about causing distress to my GI.

If you buy this expecting it to taste just like vanilla cake batter, you will be sorely disappointed. It tastes like sweetened coconut manna aka coconut butter sweetened with honey & vanilla. It does not have a lot of sugar either. The texture is exactly like coconut butter/manna. That means it will be hard as a rock when it's cold, typically with the oil solidified on the top. You will need to warm it (typically in a pot of hot water, stir until thoroughly blended). Even when it's above 70, the oil will separate from the meat. You will always need to stir it all back together.

FYI Nikki's came out with Dark Chocolate Fudge butter. I tried it & love it. Like the Vanilla Cake Batter, it causes me no digestive distress & now I have another yummy treat besides the Vanilla Cake Batter. I am thrilled to have found a safe low sugar organic food that I can enjoy.

This product is delicious. My favorite since I can't eat nuts. If you eat sugar often or your diet isn't limited to healthy foods I can see where it wouldn't taste like a treat but if you eat clean then it really tastes delicious!

My daughter ordered this product and she said it is amazing. I tried it and it is very good - you can use it in any recipe that calls for coconut butter especially in baking as the vanilla cake batter adds a little sweetness. The quality is excellent. We would buy this again.

If you're not familiar with coconut butter(coconut cream concentrate) such as this, here's how to mix it properly. See photo. Place jar in a pot of hot but not boiling water and mix throughly as it melts. Once you've done this store at room temp. Depending on your home's temperature it shouldn't harden as much as when you first received it. But if it does, simply repeat the melting and mixing. NEVER MICROWAVE AS NUKING DESTROYS THE NURTITIONAL VALUE OF EVERYTHING. There's tons of recipes and ways to eat coconut butter and since this already tastes like cake batter it's even more delicious than plain coconut butter. Most recipes call for melted coconut butter anyway so if it's good to know the basic procedure.

This stuff is some of the best tasting coconut butter you will ever have. I add it to frozen bananas and a little vanilla extract and blend in my VitaMix for mock ice cream, it's wonderful! But eating it right out of the jar works too :-)

I give customer service five stars and the actual product 3-4 stars. I was expecting a creamy, spreadable, meltable product, and this was not that...maybe my expectations were just wrong. Microwaving it did help, but it stayed pretty thick and gooey. The vanilla taste was very mild. I emailed the company about my dissatisfaction, and Nikki was prompt in replying to give me advice and offer me another flavor. I think it was only two days later that the new dark chocolate flavor was on my doorstep. This time, it was really runny without even microwaving it, LOL. So I guess the consistency depends on the jar or on the flavor...? My kids and husband liked both flavors. I typically heat 1-2 tablespoons in the microwave or stovetop and mix it into a mashed banana for coconut banana "oatmeal" - it's a great way to get some fat into my picky, skinny four-year-old. So I'm willing to give four stars to a product that's not full of sugar that my son will eat. And I appreciate the company's efforts to make me happy.

This is so good, and good for you! I do follow paleo, but even if you don't, it's absolutely delicious. I eat it straight off the spoon, but it would be delicious in coffee as well. It does solidify in cold weather, but I'm fine eating it very solid. However, you could run the unopened jar in hot water to bring it to a smoother consistency. Microwaving is also a possibility, but these days, I try to avoid the microwave as much as possible. I rather enjoy it solid, as it tastes more like a candybar.

Those who don't like it probably aren't accustomed to eating coconut butters, coconut manna, etc. Nikki's coconut butters, to me, have a smoother consistency and a creamier, sweeter taste. I will buy this often!
