Einkorn is the only non-hybridized primary wheat we have left to eat on the planet which also means it's the only safe, healthy wheat we have left. All others than I know of are hybrydized, translation, they mess with our DNA's and contribute to gluten diseases, celicac disease, crohn's disease and many others digestive in origin. I love rigatoni, it's my favorite pasta. And THIS rigatoni ... oh it's just wonderful! This is my first Einkorn product, my first Jovial product, and I've ordered more. I followed the cooking directions and the pasta turned out perfect!
