Very sharp, High quality. Love the look. I bought blue and the speckled paint is a great look, especially when combined with the marbled handles. They are non-slip and feel solid. No wiggle between blade and handle. Weight is fine, not too heavy but they don't feel flimsy. I'm not experienced enough to comment on balance but they feel balanced enough for my hands. I have several pocket knives (Kershaw, Gerber, etc.) and every knife in this set comes sharper than my pocket knives currently are (I need a better sharpening stone, but these kitchen knives are impressively sharp). They cut paper all the way across without sawing. I imagine they will stay sharp for quite a while cutting carrots and potatoes but the fine edge will surely need resharpening over time.
My only complaints:
1.) The Amazon listing doesn't include the type of metal used beyond "High-Performance Stainless-Steel". There are many grades of stainless steel, each one having its own properties. Therefore I suspect they used a version which is easy to sharpen, gets very sharp, but won't hold an edge for very long, especially against hard materials. This is to be expected, however, when buying knives in this price range. But the listing goes so far as saying "never dull, no need for sharpening"... come on really...
2.) I would also like to know what the "food safe slip-free marble finish coating" is made from. Who knows what materials will later be classified as dangerous so every product, especially ones made in other countries, needs to be transparent with the materials they are using. I understand company secrets and patent issues, but my health and peace of mind come first.Read more ›

UPDATE: I am sad to report that the marble coating is coming off the knives.
This is a review for the black New England Cutlery 6 Piece Knife set which includes the following: 8-inch Slicing Knife, 8-inch Chef Knife, 7-inch Santoku Knife, 5-inch Utility Knife, 5-inch Santoku Knife and last, but not least, a 3-inch Paring Knife.
I have to say, I think this is the best knife set I've ever owned! When I first opened the box that contained individually boxed/packaged knives, my husband and I both said "oh wow". They are beautiful! The marble coating blade is very unique and neat looking. The handle is comfortable, and also very pleasing to the eye! The blade has a special coating on it that is supposed to help prevent corrosion which is exciting to me because I have had to get rid of a few knives for that very problem! I like these knives so much that the idea of these knives lasting longer than my others, is thrilling. I started using them the same day I got them delivered to my doorstep. I cut potatoes, chicken, onions and raw bacon with them with SUCH ease! They are so sharp (which I love, dull knives are so maddening!) and they slide through my ingredients smooth and easily. I was happy to see them perform so well. They are beautiful and preform beautifully, what more could I ask for? Well, that's not it! They also clean well. Nothing seems to stick to the blade (I credit that to the coating I was talking about above). It says to wash by hand, which I intend to do, but by accident my husband added them to the dishwasher and by the time I noticed they had gone through the whole cycle. Oops. But, to my relief, they were fine! It didn't seem to do anything to them! Phew.
