Essential points for successful sourdough baking: There are several ways to produce sourdough breads promoted by numerous authors. To do it right, according to Ed, requires a method to control and regulate the proofing temperatures throughout the various cycles. He does it with a proofing box made from an inexpensive Styrofoam cooler modified to hold a porcelain light bulb holder, and a 25 watt bulb controlled by an ordinary dimmer switch. Complete directions are in the book "Classic Sourdoughs, Revised".
