Product Description

THE FARMSTEAD EGG COOKBOOK taps into the trend that eggs are healthy to eat again. High-protein, low carb diets have boosted egg sales, and the American Heart Association has relaxed their egg consumption guidelines.

Golson believes strongly in eating organic farmstead eggs -- they have a richer flavor, deeper color, and a better texture than the average grocery store egg. She calls them the ultimate comfort food, reassuringly basic but always deliciously special at the same time.

In the FARMSTEAD EGG COOKBOOK she gathers 70 healthy, hip and easy-to-make egg recipes with full color photos throughout. Learn how to properly cook everything from boiled and scrambled eggs to dishes that really celebrate eggs like: smoked trout and peeper frittata, pesto vegetable quiche, Moroccan tangine with meatballs, tomatoes and eggs, almond and orange pound cake with orange glaze, and sweet potato pie with bourbon-meringue topping

From the Inside Flap

More than five dozen fresh recipes that celebrate the simple, delectable egg

Eggs are one of the world’s favorite and most versatile foods: healthy, convenient, and infinitely adaptable to every meal of the day. Farmstead eggs are from chickens raised on small family or hobby farms. They may or may not be organic, but they are always delicious.
The Farmstead Egg Cookbook is as wholesome, varied, and useful as an egg itself—open its pages, meet the hens, and get a glimpse of country life as well as a raft of ideas for how to use yummy eggs in everyday cooking and in entertaining as well. Terry Golson’s recipes are a winning blend of the familiar and the modern, and include:

· Classic Deviled Eggs
· Pickled Beets and Eggs
· Birdie in a Basket
· Salsa and Guacamole Frittata
· Smoked Bacon and Tomato Quiche
· Chinese Fried Rice
· Ginger Pots de Crème

The Farmstead Egg Cookbook will take you to the sounds and scents of the farmstead and will be your kitchen companion for cooking with eggs every meal of the day and for every occasion of the year.

5.0 out of 5 stars "Eggactly just right", March 26, 2007
I love this little book. The simple yet beautiful pictures on the book jacket invite you to look further. It feels like just the right size and weight in your hands. The introduction gives you just the right amount of information about eggs and chickens with just the right amount of down home charm. It has just the right amount and variety of delicious, easy to follow recipes; sprinkled throughout with inspiring pictures and helpful comments.
As an added bonus the author has a fun, easy to use websight which has more information about keeping hens, reccomendations of other websights and links, books and much more fun, including my favorite; a webcam inside and out of her chicken coop. I just ordered more copies to give to friends.

2.0 out of 5 stars disappointing, August 17, 2007
I thought this book was going to deal with how to cook with different size and types of eggs....as you'd find on a farmstead... One quick mention in the beginning of the book and after that it's just a basic egg cookbook...with few recipes.

Had I seen it first, I would not have purchased it.

5.0 out of 5 stars both a practical cookbook AND a super-cute gift book, September 1, 2008
This is a really nice book of recipes that use eggs. It has beautiful photography and is a nice small size -- I agree with the previous comment that it has a lovely "feel" in the hand. A very high quality publishing effort.

From the right way to hard boil and scramble eggs to some sophisticated tastes, this book has a great deal to offer. Desserts, breakfasts, lunches, dinners... it is all here. :) Fresh eggs (from the farmer's market or your own hens) actually work a little differently in recipes, and the author explains that, too.

I bought this book to find some new uses for the zillions of eggs my three hens are providing for our family. The author is actually a trained chef who happens to love having some backyard chickens. She shares some interesting information about her chicken adventures while providing a wide variety of recipes for every palate!
