This book, which is not to be confused with Dr. Dean Ornish's
Eat More, Weigh Less, was inspired in part by Dr. Shintani's former colleague, Dr. John McDougall, who's noted for his own low-fat, anticancer diet books. Dr. Shintani's mantra is, "Dieting is dead, eat more instead!" He's compiled 175 recipes designed to promote weight loss while preventing hunger pangs and food cravings. The program is vegan and therefore cholesterol-free, and focused on low-fat, locally grown, seasonal whole foods. The recipes are definitely heavy on the sea vegetables and protein products (Wakame with Carrots; TVP Chili, Tempeh Cutlets; Seitan Ginger Stir-Fry) and chock full of beans. Cheeseburger lovers will have a hard time adjusting, but those willing to devote some time to making their diets healthier will find plenty of recipes to keep them busy.
