The Easy Vegetarian is well-named in more ways than just making life as a vegetarian an easier one than it has been in the past. Key word here is "Easy". The recipes in this little jewel of a book are easy to make and the ingredients called for are going to be on most of our pantry shelves, making it easy to throw one of these dishes together for a quick and satisfying meal. Recipes cover items from Eggless Chocolate Chip Cake to Crunchy Nutty Loaf to Dave's Lasagna (made with tofu instead of meat). There is something for every taste bud in The Easy Vegetarian and I find the dishes are "easy" to eat -- meaning "delicious and I need a second serving, please".

What is handy about this new cookbook is the size. It's small enough to throw into your purse to take along to supermarket with you and the wire spiral binding makes its easy to open, lay flat, fold back or even prop/stand on the counter while you cook away. On the back of every page is an inspirational thought that seems so appropriate for a book this size. This little cookbook will make a nice gift or stocking stuffer for a favorite friend or relative.......or new (or old) vegetarian.

This is Portia Little's second in a series of books this size, the first being "Recipes, Roses and Rhymes". I'm already looking forward to her next cookbook and I can see this as a whole series.

Food columnist, editor and feature writer for newspapers and magazines, Portia Little is an expert at food and fun.

Pursuing her passion for great food, Little decided to make a career of food writing. Her fervor brought her to deciding to pen her own cookbooks. Not wanting to be another Rachael Ray, Little decided to create her own niche by writing souvenir cookbooks. They are small spiral-bound cookbooks that are filled with delicious recipes, as well as other interests of the author. Deciding to self-publish, she claimed complete control over her cookbooks, and what a delight they are.

Some of my favorite recipes from this book are: Fresh Peach Crumble, Roasted Vegetables, and Tomato Bruschetta.

Again, Portia finds fitting quotes to precede each recipe, bringing her love of food and literature together. You will find quotes from the Bible, Albert Einstein, Mark Twain, as well as others.

Her recipes are easy-to-follow and mouth-watering. They only require ingredients found at your grocery store, as well as tools in a regular kitchen. With this book, you can create healthy meals for vegetarians and non-vegetarians alike!

I love all of Portia's 'little books' - I must since I have 6 of them! I can't remember now if The Easy Vegetarian was my first or the second book I ordered, but it is one I use quite often.

As mentioned previously by another reviewer, they open flat on the counter or can be carried with you easily when shopping for ingredients.

You can tell that Portia has experimented with these recipes often and perfects them before adding them to a book, since all of the recipes I have tried from this and any of her other books work.

We eat a lot of fruit and have tried many variations of her smoothie recipes on page 59!......and though Charles Lamb said in Grace Before Meat 'Asparagus inspires gentle thoughts....' and quoted before the recipe....your reaction to Sesame Asparagus on page 63 will be more than just gentle.....this is a great recipe!

I love the quotations found throughout the book
