I have purchased 5 or 6 copies of this book and have given away all but one of them. The recipes in this cookbook are incredibly easy to follow, and for someone like myself who has not spent much time in the kitchen, that aspect of the book is critical and much appreciated. Detailed descriptions are given for everything.

When I first began my low carb journey I was resigned to eating food that satisfied me physically but was rather repetitious. With Truly Low Carb Cooking I have experienced something very different. Karen Rysavy has shown us that there is virually nothing that cannot be converted to a low carbohydrate way of eating, and most of this can be done by using ingredients that are readily available to most people.

It is variety that helps us stick with a particular way of living. This cookbook is surely that, and more. It contains helpful household and cooking hints, as well as recipes for a wide variety of dishes that are truly a pleasure to eat. Creamy Cucumbers, Heavenly Mousse, Catsup, Creamy Seafood Bake - the variety is amazing!

I recommend this book without reservation! Put this on your Christmas list for yourself or the food afficionado in your life!

I purchased Karen Rysavy's Truly Low Carb Cooking about 6 months ago and I prepare recipes from it at least 2-3 times a week. It is definitely my most-often used and most beloved cookbook.

Ms. Rysavy's recipes are easy to follow, the ingredients are easy to obtain, and produce reliable and delicious results. This is REAL FOOD for real people and even non-dieters will love these recipes.

TLC Cooking provides recipes for homemade low carb crackers, biscuits, condiments, and desserts that allow you to save so much money by not having to purchase the tres expensive and hard to find "Low Carb Specialty" substitutes.

So many recipes and every one a gem!! If you follow a healthy low-carb lifestyle you will never regret buying Truly Low Carb Cooking Volume 1!

I absolutely love this cookbook. The recipes are easy and fast to make and they taste fantastic!!! I use this cookbook daily and love trying all the variations provided. My favorites are the Nirvana, Cheese Pots and Meaty Chili. I have made these dishes for my non-lc friends and they did not even know the difference. This cookbook is a definite "MUST" for anyone on a low carb lifestyle.
