Review

The very idea of Mexican microwave cookery may strike many as an anomaly: the subtle glories of ethnic cooking from a high-speed heartless appliance? The ultimate short-changing of a complex-flavored cuisine? I am delighted that Mexican Microwave Cookery is an informational and useful cookbook of Southwestern and Mexican recipes that can be realistically, and I emphasize the word, made in the microwave oven. Carol Medina Maze is also a home economics teacher. Her great grandmother and great-aunt were both cooks in New Mexico. Maze is intimately familiar with - and this is much of the charm of the book the native ingredients of her landscape, the chiles, the corn that becomes flour for tortillas, the spices, such as Mexican saffron. She has matched regional recipe to cooking technique. Huevos rancberos con cbile verde (ranch-style eggs with green chiles) is a one-dish breakfast or brunch that cooks in all of five minutes. Similarly, shrimp with a lovely, light combination of vegetables and chiles takes nine minutes to complete. Eight chapters - from chiles and sauces to meat, chicken, and fish dishes, to beverages and desserts - provide many tempting options from which to choose. Add to this the fact that each recipe has been nutritionally analyzed for content - fat, sodium, cholesterol, and so on - and what you have is a book that engagingly investigates the surprises of ethnic cooking in not only a modem but a health-respectful manner. Furthermore, the book is pretty. A winning combination. -- From Independent Publisher --This text refers to an out of print or unavailable edition of this title.

5.0 out of 5 stars Best quickie mexican cookbook ever!, February 27, 2003
By A Customer
Bought this while living in Phoenix. It's quick, easy, and has explanations even a gringo can understand and fix. I have had this recipe book for 15 years and am looking for copies for gifts. Just tonight I used it to find a quickie recipe for taco seasoning because I didn't have a store bought packet of seasoning. The family didn't know the difference. Salsa, Fideo, sauces. desserts-all quick and all easy! Wish she'd write another one!!

5.0 out of 5 stars Wonderfully Educating, December 10, 1999
By Dwayne E. Robinson (Phoenix, Arizona) - See all my reviews
(REAL NAME)
This book adds a new dimension to the use of the microwave oven. No more is the microwave limited to re-heating, defrosting, or "cooking" those pre-package plasticine food products from your grocer's freezer. I haved used only a subset of the techniques presented and have been completely satisified. Even though the book is targeted toward Mexican food, the concepts only require a little imagination, as well as trial-and-error, to utilize these techniques in other dishes. Because of the abundance of the microwave oven in American households (and the lack of knowledge about what to do with them), I feel this book is an invaluable resource for the serious home cook.
