About the Author

Brenda J. Shriver is from a small town in Tennessee, where she worked in a family-owned restaurant. A few years ago her husband developed coronary heart disease. Brenda found most healthy cookbooks disappointing and began developing her own recipes. Friends asked for her recipes - and led to her writing this book. Ann M. Tinsley, Ph.D., R.D. received her bachelor's degree from Penn State and served her dietic internship at Brooke Army Hospital in San Antonio, Texas. She received her master's and Ph.D. degrees from the University of Arizona. Dr. Tinsley is an associate professor of Nutrition and Food Science at the University of Arizona. She has evaluated, tested and revised recipes for eight cookbooks.
