Editorial Reviews

From Publishers Weekly

Wintry weather seems to demand slow-simmered soups and stews, and the bestselling Fix-it and Forget-it series has long been a source for these and other Crock-Pot meals. Good, who edited those homey collections, returns with a useful new diabetic edition. Each of the hundreds of recipes for appetizers, main courses, soups, vegetables, breakfast dishes and snacks comes with a nutritional analysis, and timely health tips are scattered among the recipes. Good also includes a week of sample menus (with nutritional breakdowns), answers the "Ten Most Asked Questions About Diabetes" and gives a brief reading list. Other than that, this book follows the same formula as its predecessors: recipe after recipe from people (mostly women) across the country. Some of the entrées are new, such as Autumn Harvest Pork Loin, with cider, apples and butternut squash, and Chicken Azteca, a savory mix of chicken, black beans, corn and salsa. However, many of the recipes from the original Fix-it and Forget-it are repeated here, verbatim, while others from that volume have been slightly modified to fit diet guidelines. As always with this series, lots of canned soup, frozen vegetables and cake mix go into the slow cooker in the name of ease and convenience; fortunately, those dishes have been lightened up enough so that diabetic cooks can enjoy them, too. 5.0 out of 5 stars I Love This Cook Book, May 21, 2005
I always enjoy reviewing a cookbook, but when I come across one as outstanding as this one is the joy is doubled.
Author Phyllis Pellman Good, with The American Diabetes Association, has compiled a book filled with recipes for diabetics that you make in a slow cooker. Yes, you read that correct, what a great idea for use in our busy lives.
Let me tell you this is no small work, but is absolutely packed full of page after page of wonderful recipes to plop in your slow cooker, walk away and come back to a delicious meal or desert.
Yes, again you heard me correct, there are page after page of deserts that you can make in your slow cooker and all will be loved, not only by those with diabetes, but the entire family. From main dishes to deserts, this book brings the entire family together with recipes that allow you to easily make an entire meal that can be eaten by every member of the family.
I cannot recommend this book highly enough; this is definitely one that should be in every home.
Healthy for every member of the family and delicious too, how can you beat that? Outstanding work.

5.0 out of 5 stars Delicious recipes whether diabetic or not, June 25, 2005
Counting carbohydrates and working through food exchanges in order to deal with diabetes can be a time consuming activity, especially for the busy working person. This book contains slow-cooker recipes complete with exchange list values, and information on fat, calories, cholesterol, fiber, sugars, protein, and just about anything else you would want to know in order to prepare a nutritious meal that takes minimal time out of your busy schedule. Casseroles, steak, stews, vegetables, chicken, potatoes, wings, barbecue, soups, chowders, desserts, snacks, and beverages are all well represented with an excellent selection of each as well as many more items. One thing is for sure, these recipes don't sacrifice flavor in any way. The recipes include recipes like Chicken in Mushroom Gravy, Lemon-Garlic Chicken, Potatoes O'Brien, Apple Crisp, and Carrot Cake. Fix-It and Forget-It Diabetic Cookbook is an excellent cookbook not only for diabetics but for slow cooker fans of all types.

5.0 out of 5 stars Super-quick, super-easy, and super-tasty dishes, April 10, 2005
By Midwest Book Review (Oregon, WI USA) - See all my reviews
Until new diabetes cookbooks have focused more on recipes for the disease than an easy method of cooking such as the slow cooker: enter Phyllis Pellman Good with slow cooker favorites especially geared to the diabetic in Fix-It And Forget-It Diabetic Cookbook. Dishes range from a savory Lemon Garlic Chicken to soups, bean dishes and more. Super-quick, super-easy, and super-tasty dishes the diabetic can't complain about.
