My husband has a profound abhorrence for "healthy" food! When my kids started using this cookbook, I think he was shocked himself that he actually liked the food. The recipes are easy and quick. My teenage daughter loves using this book.

This book is just wonderful. First of all, it is beautifully photographed and inspires you to cook each and every recipe. Secondly, the recipes are simple but have slightly different twists from typical American vegetarian dishes. The recipes are easy to prepare and cook - indicating real time prep and cooking time for each one. Best of all, they are delicious! I am tired of vegetarian or vegan cookbooks that require a long list of ingredients - half of which are not standard items in my pantry - and most of which tend toward an Asian flavor (something I enjoy but do not want in every single recipe). I have cooked a number of recipes from this cookbook for my non-vegetarian friends and they have asked for recipes, raving about the food. I love this book and have recommended it to a number of my friends. I cannot wait to order her other books.

I have a lot of vegetarian cookbooks on the shelf. I wouldn't have guessed this would be such a well used favorite (mostly because it's one of a series by the publisher instead of a cookbook from a restaurant or chef I had heard of) but every recipe I make from this cookbook turns out well, with balanced flavors and terrific results. I know when I reach for it that I can try something new without wondering whether or not it will be tasty. They really kitchen tested these recipes!! Instructions are very clear with pictures throughout.
