The recipes in this book are as varied as the Golden State itself. The editors chose the over 500 recipes from more than 100 outstanding California cookbooks (our own Bob Carter's Food Festivals of Northern & Southern California were contributors). The result is an eclectic mix, from trendy to traditional.

California, perhaps more than anywhere else in the nation, has more variety within its borders - from cultural diversity to agricultural bounties to varied terrain. The recipes here capture almost all aspects of the state, as cookbooks from large cites as well as small communities have contributed their best offerings.

Many of the recipes we take for granted everyday were actually made famous in the Golden State. Best Of The Best From California Cookbook collects more than five hundred all-time favorite recipes drawn from other California cookbooks with the hallmarks of the Golden State. From Spinach/Cheese Frittata; Veal Marsala; and Toasted Walnut Tart with Wild Blackberry Sauce and Creme Fraiche; to Bean, Barley and Mushroom Soup; California Rice; and Buttermilk Spice Cake, Best Of The Best From California Cookbook is an excellent amalgamation of some of the finest dishes California has to offer, each with direct "kitchen cook friendly" preparation instructions.
