Large cuts of meat like ribs, roasts, and whole chickens call for the slow, even heat of indirect cooking. But arranging hot coals around the outside of a grill can be messy and difficult. This pair of metal rails solves the problem by holding charcoal in place against the side of a kettle grill, allowing you to place a drip pan in the center to capture juice for sauces and prevent dangerous flare-ups. Heat from the racks rises, reflects off the inside of the grill, and surrounds the meat with heat from all sides--much like a convection oven but with the improved texture and flavor of grilled food. To adjust the temperature inside the grill, simply add more coals. These charcoal rails fit all kettle grills 18-1/2 inches in diameter or larger.
