Freshly ground herbs and spices are more aromatic and piquant than ready-ground or crushed varieties. Some people like a fresh grind of hot red peppers on just about anything. This clear-glass and white-plastic mill, housing a ceramic grinding mechanism, is attractive enough to leave on the table filled with chilies. It's an indispensable tool in concocting your own curries, or grinding cloves for baking or mustard seed to perk up a salad dressing. I have three of these that I picked up in Germany last year, where they're only slightly cheaper at about 15 Euro apiece.

The ceramic mechanism makes for a very adjustable, very consistent grind and you never have to worry about the burrs rusting. One tip for anyone wanting to change spices is to grind some rock salt through the mechanism. That seems to do a pretty good job of cleaning out residue. However, I'd caution against trying to use the same grinder both for normal spices/herbs and wildly aromatic or spicy things like dried chilis--you'll be hard-pressed to get the strong smell out 100%.

However, I have to knock a star from the WMF version due to some excellent competition from IKEA. They sell a ceramic spice mill for less than half the price which appears to have an almost identical ceramic mechanism. Better yet, IKEA sells a cheap 3-pack of glass spice jars that are identical twins to the one that comes with their ceramic spice mill, letting you easily remove the grinding mechanism and screw it onto your different spice jars as needed.

This spice mill is fabulous! I'd like one for every spice in my cabinet, including pepper. The ceramic grinding mechanism is sturdy, works well, and adjusts from fine to coarse easily and reliably. Doesn't look bad, either.

you can pay more, but why? I've been shopping for years to aquire a mill with a ceramic mechanism, but just couldn't part with the money that was being asked. When I saw this one I figured what the heck. Believe me, I cook alot for alot of pple. and these are the ticket at the stove and the table. They adjust as good as any mills I've owned and the "feel" is the best. Plus, the design for opening and filling is the definition of "ease of use". I've purchased 4 now: salt, two kinds of pepper, and coriander seed. I'll buy a few more too and try them with other spice mixtures like Dry Spice rubs.
