If you can't find the perfect place to sate your raw-fish cravings, why not try it at home? Sushi chef Hiromi Eizuka covers all the basics in How to Make Sushi. Her quiet, knowledgeable delivery serves her well as she explains the essential tools, ingredients, and techniques used to make sashimi, nagiri, and rolls. She lends insight into which varieties of wasabi are best, how to cut fish neatly, and what kind of knife to use, always taking the time to articulate why she does what she does. Her techniques are covered thoroughly from several different angles, so novices can pick them up more easily without constant rewinding. Sushi really is easy to prepare; Eizuka's lessons will help the viewer learn to make raw fish beautiful and delicious. --Rob Lightner

2.0 out of 5 stars Beginners only, February 5, 2002
By Bakers Biscuit "jgab" (Bernalillo, New Mexico United States) - See all my reviews
I've sat at many sushi bars in my lifetime and I've asked enough questions to learn quite a bit. This video is very basic. I think that a how-to sushi book would be a little more thorough. The video is well organized and easy to follow but the sushi she was showing did not look very nice. After the sushi was presented it looked like beginner sushi. I've made sushi in my home and it was presented nicer than this. This video did teach me how to pronounce certain types of sushi and some differences but that is information that is easily available. About the only thing worth my 30 minute lesson and 20 dollar price tag was the information about seaweed paper which I probably could have learned from an oriental store. If you are reading my review you should know that I am a chef experienced in some of the information that is taught on the video. I do not recommend this video if you are at the very beginning of your sushi experiences and you don't know the difference between wasabi and nori. Otherwise save your money for a book or a better video. I'm sending my tape back for a refund.

I would not recommend this if you really want to
know to how to make Sushi unless you are looking for a
Sushi cook's uniform.

5.0 out of 5 stars Easy and Informative, July 1, 2000
This video was easy to follow, and told me exactly what I needed to make sushi at home. It even gave some simple tricks and substitutions so I wouldn't have to spend alot on preperation utensils. It also shows a great example of how to set up a small "make it yourself" sushi party buffet.
