From the supplier: Plate freezer technology remains predominant in the frozen food industry. The equipment uses plates which are cooled to about -40 deg F and are then used to squeeze the products to be frozen. The freezing action is relatively fast as the products come in contact with the plates. The main part of the plate freezing system is the compressor, and plant engineers usually provide a backup compressor to avoid shutdown when the main compressor fails.
