This 15 inch carbon steel* pan is the ideal product for cooking the perfect paella. This pan is made in old fashioned tradition and is a true paella pan ¿ wide, round and shallow, and with splayed sides. It is exactly the type that has been used in Spain through the ages. In order to cook paella, you need a paella pan! The shape and construction make the difference. Paella is cooked in a thin layer which is the reason that paella pans are large and shallow. You will notice the large cooking surface that dips slightly in the middle to facilitate pooling of oil during preliminary sautéing. Myson paella pans are ideally suited for paella, but you will find your way to limitless uses for other dishes. Its great for grilling, fish fries, clam bakes, breakfast, and a variety of outdoor cooking. Myson paella pans are meant to be used over an open flame, either in the kitchen on a gas cook top or over an open fire outdoors. Great for cookouts, hikes, and picnics too. This pan¿s carbon steel material allows for even heating and is the traditional material that improves as it ages. The red handles are produced from steel and painted with heat resistant paint, which is a Spanish trademark. At first use, your paella pan will season and develop a thin carbonized layer adhered to the cooking surface. Upon repeated use, this seasoning will result in a natural non-stick surface that adds a subtle flavor that improves with age. I am still in the process of seasoning this pan...yes it's a pan that needs seasoning...So if you are planning on cooking Paella in it the first day you get it, forget it. All good things come to those who wait...now I said process and that is what is unless you have a couple of hours to devote to it, I have been a little busy.

As a side note I bought this one after someone gave me the 18" one for Christmas...a great gift...but with one problem the 18" ONE DOES NOT FIT IN MY OVEN (I finish my Paella on the bottom rack, it heats more uniform than the stove) the measurement is the bottom of the pan, and DOES NOT INCLUDE THE SIDES AND LIP OF THE PAN!

The 17" would have fit in the oven but I decided to go a little smaller instead of just 1" that would give me two real different sizes since I kept the 18" to do Paella the real way, over a campfire.

I bought this paella pan for a friend who is just starting to make paella. He took his time to season the pan according to the included instructions. The first paella we made was perfect. The rice was nice and crispy on the bottom and incorporated the flavors of the fish and meats we cooked in it. It is a large pan and covers a little over one gas burner so we had to move it around a bit to make sure there were no burn spots. It is going to be perfect when we can use it on the grill this summer. Even for its price it doesn't look or feel cheap. It even looks good on the shelf.

we seasoned the pan per the instructions and have used it twice. Works as advertised. Easy to control the heat. Any larger and it would require more than one burner. We use one burner primarily, then put it over two at lower temperature until all the water is absorbed (rotating occasionally).
