I read the book and bought it for a friend. I was very surprised at the poor ratings it received. Yes, it is thorough and conservative and objective. It does not claim that
Kombucha will turn you 20 years younger and will solve all your health problems. However, it highly recommends the use of Kombucha and it explains their recommendations. Most of all it explains how to avoid common mistakes in the preparation and its consumption.
By conservative I did not mean anti-scientific because that is what many people think what conservative means these days. When only interested in a recipe one can find it on the internet for free, however when buying a book with the title "Kombucha: How to and What It's All About" then you should expect some chemical formulas.
After all the subject is nutrition. One finds in the book exactly what the title says.

This book offers everything about Kombucha, and I mean with a vengeance. You could probably find a simpler book on how to make it, but if you want to know chemically what it does to you in semi-layman terms, this is it. I skipped through most of the chemical compound stuff.

I get the feeling from this author that Kombucha tea is something that you may not want to try. This Is Crazy!!! Everyone on this planet should be drinking this tea. This tea has even healed Cancer.... I do not like this book at all!

This book is so uninteresting its totally boring. I did find some useful information in this book until the half mark then it lapses into a story of sorts that makes little or no sense. The reactions of the ingredients should of been explained in a straight forward manner not jumbled into a childs story that is uninteresting and nonsensical. Look else where Kombucha hounds. I only give it two stars due to the beginning of the book being somewhat useful.

If you like science and how things work this is a good source. The "story" she uses throughout is very childish and long winded. It actually confuses the actual science because it is buried in the silliness, but the real science is there. It is just my personal opinion. I like my science dry and straight up ;D
