If you remember it took AGES for the movies to come out on DVD. Give it some time, these movies were made for Blu-Ray.

The other thing could be once these movies are released on blu-ray it's going to kill off sells of the SW movies on dvd. I see a lot of the original boxed SW trilogy available at Walmart, Target, Best Buy, Ebay etc... Mabey FOX or Lucas is waiting for more of a sells push (Black Friday Christmas time) to get rid of those movies before releasing blu-ray versions.

Lets face it, once there released on Blu-ray, those boxed sets are permanently going to just collect dust on those shelves, or they'll have to be dramatically slashed in price to get rid of them.

I just watched the entire 6 movie Star Wars epic on blu ray and now I am watching the documentaries on the making of. Everything looks amazing. My only complaint is that Lucas should have included the original theatrical versions with this blu ray release. Even still, the cgi additions are very quick and barely take up any of the movie time. I was really blown away at how good the first 3 movies looked in 1080p.
